Noodle soup and cooked vegetables

I started with some very ripe tomatoes that no longer went in the salad and what I thought I would come with a soup, but a soup with cooked vegetables. Solarium tomatoes, bought, in the garden only now begin to ripen, if they grab and do not fall down bunches, carrots still bought, zucchini and onions from the garden. So it's a half-hearted soup .... Summer recipes.

  • 1 zucchini about 550 g
  • 2 carrots about 150 g
  • red onion 5-6 pcs (it's small)

  • optional grated cheeses - Mozzarella, Emmentaler and Cedar

RECIPE PREPARATION Noodle soup and cooked vegetables:

First I prepared my ingredients, I washed the tomatoes, the zucchini, I peeled the onion and the carrot and I washed them. I placed them in the stove tray (tray lined with baking paper), the whole tomatoes, the sliced ​​zucchini, the larger onion cut, the small one I left it whole and I cut the carrot into sticks, I sprinkled salt and I put the tray in the oven until the vegetables start to soften and change color. I took them out of the oven and put them in the blender, I peeled the tomatoes, I blended the vegetables then I put them in a pan, I added about 2 liters of water and I let them boil, I adjusted the salt, then I added the noodles and let it boil for a few more minutes (the noodles being very fine, boil quickly). I also ground pepper and then put out the fire. I served hot soup with grated cheese, it can be served cold without cheese.


A delicious breakfast with egg, sausages and vegetables

8 buns (one bun for each person) 8 eggs 4 sausages or other sausages 1 onion 2 peppers 4 mushrooms 2 tablespoons sour cream olive oil 200 gr cheese salt, pepper, dried oregano and red pepper flakes.

Method of preparation

First we prepare the bun filling.

In a pan, with a little hot olive oil, add the onion and almost immediately the peppers, and the mushrooms, all sliced.

Then we slice the sausages, we throw them in the pan when the vegetables soften.

We keep them on low heat until the liquid falls out of the pan.

Season with salt and pepper.

Turn off the heat and season with two tablespoons of sour cream.

We prepare the buns. We cut the lid and remove the core.

We put them on a tray lined with baking paper, sprinkled with olive oil.

Sprinkle with oil and the inside of the buns. Then add a layer of grated cheese.

The vegetables with the sausages come on top, then we break an egg in each bun.

But be careful, after you have arranged the vegetables, you must have room for the egg.

Season with salt, pepper, oregano and pepper flakes, sprinkle with a few strands of grated cheese.

Bake them in the hot oven at 180 degrees C, about 10-15 minutes, until the egg hardens.

They are perfect for breakfast or a snack.

The secret is that we can prepare them in the evening, and in the morning just heat them in the microwave. Freshly baked, the buns are crispy and reheated become soft and fluffy.
