BLACKBERRY SMOOTHIE WITH BANANAS AND COCONUT MILK
I hope you have some blackberries kept in the freezer. If not, you will be as amazed as I am when you see them. I was almost fooled that they were fresh if I didn't see them one day in a special box of frozen products in a supermarket. They looked so good I couldn't help myself. And they were huge. I can't wait to see how carefully they were frozen because they looked impeccable, as if they were picked yesterday. It doesn't matter if they are frozen, especially since most of the time we prepare a smoothie with frozen fruits.
I used them as fast as I could in this blackberry smoothie with bananas and coconut milk to start my day with a healthy glass full of antioxidants and vitamins. It only takes 5 minutes and is very filling for a quick breakfast, especially if you have a very well cooked banana and a Greek yogurt on hand. I love coconut milk and I use it quite often, but if you don't have it, it can be easily replaced with soy milk or almond milk.
- 200 gr. blackberries
- 1 banana
- 1 tablespoon honey
- 150 gr. Greek yogurt
- 300 ml. Coconut milk
1 Put the coconut milk and yogurt in the blender to begin with.
2 Add the blackberries and a medium banana cut into pieces, and if you like a little sweeter you can add a tablespoon of honey, maple syrup or any other favorite sweetener.
3 Mix for 2-3 minutes until you get a smooth and beautifully colored mixture.
4 Check the consistency and add more if you want 2-3 ice cubes or a few tablespoons of cold water.
5 Prepare two glasses in which you pour this delicious smoothie and enjoy it immediately. If there is a portion left, it can be kept in the fridge for a few hours for later snacking.

- the whites are separated from the yolks. Beat the egg whites with the salt powder. Gradually add half the amount of sugar until you get a "sticky" foam.
- The yolks are mixed separately in another bowl with the sugar, until they change color. Then add the oil gradually and mix on low speed. Finally, add the yogurt and mix well with the mixer.
- add the yolk mixture over the egg white foam and lightly incorporate with a silicone spatula.
- gradually add flour mixed with baking powder and sieved. Incorporate easily with a spatula.
- Half of the composition obtained is poured into a cake form greased with butter or lined with baking paper (I chose the second option).
- Then place a layer of blackberries. Cover with the rest of the dough and place the remaining blackberries on top. leave it in the oven for about 35 minutes, until it passes the "toothpick test". Bake the cake at 180 degrees until it browns nicely on top.
- Let it cool completely, then take it out of the mold (remove the baking paper) and place it on a plate.

Simple cake with yogurt without scales, one of the simplest and tastiest cakes I've made so far. I discovered this cake for the first time in Morocco. My sister-in-law prepared it for a family holiday and I was very surprised to see that she does not use a scale. He put a jar of yogurt in a bowl and used the jar to measure the rest of the ingredients. I was very curious to see how the cake came out and to my surprise it was wonderful. What I like about this simple cake with yogurt without scales is the fact that it is very good and fluffy, although the preparation is child's play. In addition, you can easily customize it as you want or as you need. You can use any glass of yogurt of 140-150g. I used natural yogurt, without added fruit or sugar, but you can also use fruit yogurt if you want. I slightly reduced the amount of sugar and oil. In my sister-in-law's recipe there were 2 glasses of sugar yogurt, and I put 1 glass and a half and 1 glass of oil, and I put only half.
Instead of oil you can also use melted butter. The oil is also good enough. For flavor, I put vanilla, but you can also add lemon or orange essence. Almost any flavor is suitable for this simple yogurt cake. If you want to make it with cocoa, you can add 2-3 tablespoons of cocoa to the composition. It is very important to have all the ingredients at room temperature, especially yogurt and eggs. All you have to do is mix all the ingredients, and the composition is ready. You don't even need a mixer, one goal is enough.
The most important thing is that you can use the composition of the cake for whatever you need. You can make it for a cake top, muffins, cake or you can put it in a rectangular cake tray. I put it in a round cake pan. You can add fruits, nuts, hazelnuts, chocolate or anything else you want. It is one of the simplest cakes you can try and it will come out just as good and beautiful every time. Yogurt, unlike caught milk, needs added ferments to sour. Therefore, for the first homemade yogurt you will have to buy a small commercial yogurt, preferably from a local producer. I'm talking here about a simple yogurt with a fat percentage of approx. 2.5-3.5%. It must be simple, without any extra creamy version or contain anything other than milk and specific ferments.
From the quantities below result 2 jars of approx. 330 ml of natural homemade yogurt.
