In a bowl prepare flour, mixed with salt powder. In a cup prepare the mayonnaise: put a little warm milk (1/4 cup), yeast, a tablespoon of sugar and a tablespoon of flour. Mix them and let them rise for about 10 minutes. Meanwhile, separate the eggs and heat the rest of the milk. Rub the yolks with the sugar until they become creamy. Add lemon juice, orange peel and mix. Beat the egg whites with a pinch of salt until they become a hard foam.
Then pour the very hot milk over the yolks and mix the composition. Put the mayonnaise over the flour and mix.
Add a little of the egg yolks with milk, then the beaten egg whites and finally the vanilla essence. While we are mixing the dough, we put the butter to melt. Then pour the melted and cooled butter and knead the dough until it sticks to your hands.
Sprinkle a little flour, cover the bowl with a towel and keep it in a warm place until it increases in volume (at least double). Divide the dough in half.
We spread one of the pieces on a countertop on which we sprinkled a little flour and we spread it. With the help of a twister we transfer it to the tray with removable walls, lined on the bottom with baking paper and on the walls with oil and flour.
Prepare the poppy seed filling by boiling 50 g grated marzipan with milk, poppy seeds, sugar, honey, butter, cinnamon.
Boil stirring as often as we can until it becomes a consistent composition. Remove from the heat, let cool, then add the rest of the grated marzipan and an egg.
Mix well, then let it wait until you make the cream cheese.
Mix the cottage cheese with ricotta, grated lemon peel, the 2 eggs and an egg yolk, flour, caster sugar, vanilla sugar and vanilla essence until the composition is homogenous.
Add the melted butter and mix well.
We take 3 tablespoons of cream cheese and put them over the poppy seeds. Homogenize the composition and pour it into the pan over the dough. Pour the cream cheese over the poppy seed cream. We knit 3 thin strips of the remaining dough and decorate the Easter on the edge. For the decoration I tried a flower from dough balls.
Bake the pasca for the first 45 minutes at 160 ° C keeping the pasca covered, then another 45 minutes at 180 °, giving up after 15 minutes at 180 ° C the foil that covers it. When we take it out of the oven, the cheese must be coagulated, very-very little trembling to the center. It will harden in a few hours. Grease the dough warm with a beaten egg yolk with 1 tablespoon of milk and leave in the oven for 1 minute.

- 80 g butter, 3 egg yolks, 50 g brown sugar
- 2 egg whites, 15 g yeast, 2.5 tablespoons sugar,
- A pinch of salt, 1.5 tablespoons rum, 30 grams of raisins, candied fruit
- 1 sachet of vanilla sugar, 160 g of poppy seeds, honey
Method of preparation:
First we prepare the dough. Crush the yeast and pour over it 3 tablespoons of milk, a tablespoon of flour and half a tablespoon of sugar. Mix well, cover with a kitchen towel and let it rise for 15 minutes.
After the yeast has risen, add the remaining flour, the remaining milk, 2 yolks, 2 tablespoons of sugar and a pinch of salt. Mix well, then add the rum and vanilla sugar. Knead the dough, and at the end, add 50 g of melted butter.
Form a ball of dough and put it in a bowl greased with oil. Cover the dough with a kitchen towel and let it rise in a warm place for 60-90 minutes.
To make the filling we must boil the poppy seeds in 500 ml of boiling water. Boil the poppy seeds until the water evaporates completely. We then let them cool and then grind them in a blender.
Add brown sugar, raisins, candied fruit, honey and mix. Beat the egg whites and add them to the previously prepared filling. Add the remaining butter.
After the dough has doubled in volume, transfer it to the work surface sprinkled with flour and spread it in a rectangular sheet. Spread the filling evenly, then roll the dough in both directions to form a double roll.

If we have a detachable shape, it is good to use it to bake Easter. Grease the form with oil and press it with flour.
We take the dough and divide it into two pieces. We knead one of them, then spread it round and arrange it on the bottom of our tray. Divide the other half of the dough in two or three and make strips, which we weave together (as in rolls).
Arrange the rolled-up braid along the edges of the tray over the sheet of dough. Let it rest for 15-20 minutes, then pour the cheese filling inside, left free.
Grease with beaten egg and put in the preheated oven (180 degrees) for 20 minutes, then lower the temperature to 140 degrees and continue to bake for another 30 minutes (at the end of this time we test the toothpicks to convince ourselves to bake well) . We take the Easter cake out of the oven and let it cool, then we take it out of the form and let it cool down for good.
