  • 200g fresh raspberries
  • 50g caster sugar
  • juice of 1 lemon
  • 397g tin condensed milk
  • 600ml double cream
  • 200g frozen raspberries
  • a few handfuls of chocolate chunks (optional)

  1. Put the fresh raspberries in a pan with the caster sugar and lemon juice and simmer for 15 minutes, stirring occasionally.
  2. In a bowl put the condensed milk and double cream and whisk by hand until the mixture thickens and falls in ribbons off of the whisk.
  3. Next remove the raspberry mixture from the heat and sieve to remove all the pips. This will leave you with a thick sauce.
  4. Now put the condensed milk and cream into a 2L food box and slowly add the raspberry sauce bit by bit, stirring gently with a spatula to create a rippled effect.
  5. Next crush the frozen raspberries into small pieces. Add the frozen raspberry pieces and chocolate chips to the cream, condensed milk and raspberry sauce.
  6. Place in freezer for at least 3 hours.

Ok. So, I have a confession to make.

I&rsquom absolutely in love with blue raspberry Slurpees.

I would suck one of those down every day if I could.

But I also love ice cream.

And having two high-sugar snacks in one day is just a liiiiiiiittle too much for my brain to process.

So, I decided I&rsquod make some Blue Raspberry Ice Cream.

A simple, No Churn Ice Cream Recipe, it&rsquos so good, I have already eaten it all&ndashand now I am about to make more.

The trick with this Blue Raspberry Ice Cream is to make a new batch the day before you&rsquore about to run out, I think.

I mean, that&rsquos the ONLY way to make sure you&rsquore sweet-tooth is happy, right?

Because even though it&rsquos a No Churn Ice Cream Recipe, it still has to sit in the freezer.

So, to keep from running out&hellipwell, you see, right?

Alright, now, here&rsquos the trick.

No Churn Raspberry Ice Cream

Well, I suppose I told you that my Raspberry mania did not end with my raspberry cupcakes. Actually I doubt if it will ever end. Raspberries have taken over my life at the moment. After spending a good amount of time reading up on how to freeze berries, I promised myself I will wait till summer. Passing by the freezer section at the supermarket, I forgot all about my resolve and got a larger pack this time. And thus began the raspberry madness. All over again.

I notice ice cream recipes, frozen yoghurt all over the blogosphere. So I decided to make one too. I love this recipe to bits. The colour just blows me away. What an amazing pink! And the taste.. Honestly the only reason you wouldn’t make this is if didn’t have access to raspberries. Or if eggs (egg white) are an absolute no-no. Once you do…you are addicted for life! Like me:-) The recipe, rather somewhat similar recipe was featured on Masterchef Australia with different set of fruits. I adapted the concept with a bit of variation on the ingredients and proportions to suit myself. And it worked beautifully for me.

Can it get simpler than this? Just 3 ingredients! No ice cream machine! Dairy free too. And so easy to make. Texturally it is like a ice-cream but tastes like a sorbet. The ice cream can be stored for up to a month in your freezer.

No Churn Raspberry Ice Cream

250 g frozen raspberries (if you have fresh raspberries, just put them in the freezer in an airtight container and freeze overnite)
3/4 cup castor sugar
1 egg white

In the bowl of your electric mixer or with your hand mixer whisk all the ingredients together on high-speed, till the mixture doubles in volume (about 5-7 minutes)

Pour the mixture into an ice cream container or any air tight container and freeze for at least 5 hours, preferably overnight. I stored mine in a glass tray and covered tightly with cling film.


How does the no-churn ice cream process work to give similar results to traditional methods?

When making ice cream, a sweet liquid base is made first which typically contains milk, sugar, eggs, or cornstarch. These ingredients together create a rich, creamy and delicious ice cream that solidifies when exposed to the continuous cold environment of churning. For no-churn ice cream, the sweetened condensed milk is your thickened sweet base and the action of whipping the cream naturally adds air called overrun. It’s important to add some air to the ice cream. Otherwise, it will be an inedible frozen block. When you combine those two ingredients, you have a creamy, smooth, flavored dessert that has a similar taste and scoop-ability to traditional ice cream, without the fancy equipment!

Yotam Ottolenghi’s no-churn raspberry ice cream

Make this throughout the year: fresh raspberries are great when they’re in season and there is a glut, but frozen also work really well. The liquid released by the frozen kind actually gives the purée a lovely smooth consistency. Get ahead with making this: it needs to freeze for at least 12 hours and both the ice cream and purée can be kept for up to a month.

SERVES 6
600g fresh raspberries (or frozen and defrosted)
2 tbsp icing sugar
200ml double cream
1 egg, plus 2 egg yolks
1 tsp lemon juice
180g caster sugar
⅛ tsp salt

1. Place the raspberries in a food processor and blitz to form a purée. Pass them through a fine sieve set over a bowl, using a large spoon to scrape the purée through the sieve to remove the seeds. Do this in batches if you need to. Measure out 260g of the purée and set aside. Sift the icing sugar into the remaining purée – about 100g – and decant into a jug. Keep in the fridge until ready to serve.
2. Place the cream in the bowl of an electric mixer with the whisk attachment in place. Whip until soft peaks form, then scrape into a bowl. Keep in the fridge until ready to use.
3. Fill a medium saucepan, which your electric mixer bowl fits snugly over, with enough water so that it rises a couple of centimetres without touching the base of the bowl. Bring the water to the boil, then reduce to a low simmer.
4. In the meantime, whisk together the egg, yolks, lemon juice, sugar and salt in the bowl of the electric mixer. Place the bowl over the simmering water and whisk the mixture continuously with a hand whisk for about 5 minutes, until the sugar has dissolved and the mix is very warm. Transfer the bowl back to the electric mixer with the whisk attachment in place and beat on medium high, until the mixture is thick and cooled: it will thicken quite quickly but takes about 10 minutes or more to cool. Add the 260g of purée and whisk on a low speed until combined. Scrape down the sides of the bowl and continue to mix until combined. Remove the whipped cream from the fridge and fold through to incorporate. Scrape the mixture into a large freezer container, cover the top with clingfilm and freeze for at least 12 hours.
5. Ten minutes before serving, remove the ice cream from the freezer so that it is soft enough to scoop. Divide among 6 bowls and serve at once, with a drizzle of the reserved sweetened raspberry juice spooned over each portion.

  1. The first step is using a food processor to mix your fresh raspberries and cream cheese together.
  2. Now you reach for your mixer and start whipping up your heavy whipping cream.
  3. Once thickened pour in your sweetened condensed milk, and vanilla and mix up.
  4. Fold in your raspberry cheesecake mixture and pour into pan.
  5. Freeze until fully frozen and then scoop and serve!
