But making and preparing a ton of tacos in advance really isn’t a feasible task, especially since guests will likely desire more than one (think like, five) tacos during the course of a party. To help tackle the taco dilemma, we talked to La Cenita's executive chef Akhtar Nawab about curating the perfect taco bar for your next party.

The Daily Meal: Why is a taco bar great for parties?

Akhtar Nawab: Mexican food is always so festive and fun. Tacos are a great interactive food that gets people talking and laughing.

TDM: What is the easiest way to pull together a taco bar?

AN: Make sure you have all of your toppings in separate bowls so that it is easy and accessible for each guest to create their own taco to their liking. This way they can pick and choose their own ingredients.

TDM: What are the best vessels for a taco bar?

AN: Cazuelas, earthen dishes, and lots of bright, fun colors.

TDM: What are some unique things you can put into a taco bar spread?

AN: I like habanero pickled onions, cilantro from the greenmarket (much spicier and fresher than what you can find at the grocery store), fresh spicy salsas, rajas (poblano peppers and onions cooked together), pickled jalapeños, fresh sliced avocado, and a heavy supply of beer.

TDM: Name some uncommon, but delicious, taco toppings.

AN: I love the Smoked Peanut Mole we serve here at La Cenita. Other toppings that are delicious are salsa borracha with mezcal and orange juice, charred pineapple, and radishes marinated with grapefruit and habanero.

TDM: What are your décor ideas?

AN: Colorful tablecloths, skeletons, wacky masked wrestlers seem compulsory, a massive Mexican guitar with four strings that sounds like a bass, and maybe a sombrero or two. I think those colorful, tiny donkey muñeca dolls are cute, and one of those scary tequila bottles that look like a skull [Kah Tequila].

TDM: What is the best way to serve the taco meats?

AN: I like the more stewed options that can be kept over a low flame, like lamb barbacoa and tinga de pollo. The longer they cook the better they get!

An al pastor would be fun with a heating element like a shawarma or gyro.

TDM: What do people not know about tacos?

AN: They can be healthful and full of flavor without adding the usual fatty toppings.

TDM: What are some common mistakes people make with tacos?

AN: A common mistake is when people try to make them ahead of time and then they lose all their integrity. The salsas need to be very strong.

TDM: What does your ultimate taco include?

AN: Morel mushrooms, huitlacoche, posole, crema, and salsa borracha is one of my favorites. Also, adding rajas [poblanos and onions] doesn't hurt.

1. Ground Beef

How to Make Taco Meat

A taco bar is only going to be as good as the taco meat, am-I-right? Skip the pre-packaged taco seasoning kits and make your own taco meat at home using our Homemade Taco Seasoning.

  1. In a large skillet, heat some oil over medium heat. Saute the diced onion, stirring frequently, until softened, 4 to 5 minutes. Stir in minced garlic cloves and cook for 30 to 60 seconds more.
  2. Increase the heat to medium-high. Add the ground beef and cook for 5-7 minutes, or until no longer pink, breaking up the meat with a wooden spoon as it browns. Drain off excess grease.
  3. Sprinkle 3-4 tablespoons of taco seasoning over the meat and stir until coated. Add in some chicken/beef/vegetable broth and bring to a simmer. Reduce the heat to medium-low and simmer, uncovered, until the mixture has reduced some, about 5 minutes.

When it comes to meat, you’ll definitely want to beef up your taco bar with carne asada. When it comes to the cut, go traditional with thin flank or skirt for a quick cook and tender meat. A marinade is a must and grilling is optimal for some char and smokiness.

Keep the flames burning for pollo al carbon. The citrus and pepper-spiked chicken will have you going loco. As for the other white meat, chile-marinated al pastor is another grill favorite (don’t forget the pineapple) but if you’re looking for an excuse to break out the Crock Pot (or Dutch oven), tender and juicy carnitas can’t be beat. After the nearly three-hour simmer, don’t forget the essential finishing touch of cooking the pork shoulder in its own fat to achieve the dish’s signature crispy edges.

On the seafood front, fish tacos are a no-brainer. While it’s tempting to get your fry on, they’ll need to be made-to-order because no one likes them soggy. That’s why for purposes of a taco bar, we recommend grilling—not only is it less stressful, but it’s also healthier. Stick with a firm white fish such as tilapia, snapper, cod, mahi mahi, or catfish. If it’s crustacean you crave, leave room on the grill for spice-rubbed shrimp.

Vegetarian tacos are a great way to make your farmer’s market haul more festive. Select your produce depending on what’s in season. Mushrooms, squash, and poblano peppers are particular favorites.

Onions are a must in any taco bar. Chopped white are worth the tears or use red for a quick and easy pickle addition. Cilantro is a frequent companion to the onion, and is also easy to grow yourself.

As for the queso, shredded jack and mozzarella are readily available and affordable options. But if you can find it, salty, crumbly Cotija can’t be beat.

When I’m creating a taco bar with fresh fixings like salsa, crisp garnishes, and a veggie filling, I always include something creamy, too. It could be as simple as sliced avocado, or it could be one of the punchy sauces below. No matter what you pick, it’ll make your tacos better. They’ll be richer, more satisfying, and more complex.

Guacamole
Top it onto your taco or scoop it up with chips. When it comes to guac, you really can’t go wrong.

Avocado Sauce
This bright and creamy sauce comes from Julia Turshen’s cookbook Simply Julia. It’s fantastic on her roasted cauliflower tacos, or any tacos, for that matter.

Cashew Sour Cream
Don’t do dairy? This creamy, tangy taco topping is a perfect replacement for sour cream.

Chipotle Sauce
I doubt you’ll have leftovers (this sauce is seriously addictive), but if you do, you’re in luck. You can drizzle them over a grain bowl, slather them on a veggie burger, or devour them with sweet potato fries the next day.

Vegan Ranch Dressing
Totally inauthentic? Yes. Totally delicious? Also yes. I love how its rich, garlicky, tangy flavor plays off fresh fillings like grilled veggies and roasted sweet potatoes.

Cilantro Lime Dressing

Recipe Summary

  • 1 head romaine lettuce, shredded and refrigerated (until crisp and dry)
  • 8 radishes, thinly sliced (about 3/4 cup)

Toast each tortilla in a hot skillet or directly over a gas flame until softened, 15 to 20 seconds per side. Stack tortillas in a dish towel, keeping them wrapped.

How to Create an Allergy-Friendly Taco Bar

A Taco Bar is the perfect way to serve food to a large group. It’s inexpensive, easy to put together, and allows customization for guests.

Whenever we have friends over, I like to have a variety of options for food. Especially when it’s our Dinner Club because we have multiple dietary restrictions in our group. One is severely allergic to dairy, another is a vegetarian. And there are 4 kids ages 6 and under so that comes with its own challenges. Last month we decided to do a Taco Bar for dinner.

It’s a perfect option when you have a lot of people for a few reasons:

  • The ingredients are pretty simple
  • It’s an inexpensive meal to put together
  • There isn’t a lot of cooking involved
  • Everyone can put their taco together and have exactly what they want
  • You can have options for almost every dietary restriction

To avoid dairy, we made sure the cheese was in its own bowl and the sour cream stayed in the container it came in. For fillings, we did both traditional ground beef and refried beans for our vegetarian friend (and I prefer beans, too). Also, if you need to avoid gluten, corn tortillas are usually a safe option. The kids had simple tacos with very few fillings while the adults loaded theirs up.

When we went to Missouri while I was pregnant with Tyler, Justin’s family threw us a surprise baby shower. His aunt wanted to do a Taco Bar for all of the reasons I listed, but his grandmother (who is one of the sweetest people I have ever met) disagreed. Her reasoning:

Also, heat the refried beans on the stovetop so they are warm. Make sure to stir frequently so they don’t burn on the bottom. Chop all of the vegetables, shred the cheese, and prepare any other taco toppings.

Lay everything out in separate bowls or serving dishes. If you have one, use a chafing dish for the taco meat and beans to keep them warm.
