RECIPE PREPARATION Ciulama with wings:

From 6-8 wings, an onion, a carrot, a pepper, salt and about 2 liters of water make a soup.

In a saucepan put the butter to melt, when it has melted add the flour and mix for 1 minute, add the bird soup little by little, mix and let it simmer until it thickens like sour cream. Add the poultry wings that have boiled in the soup and chopped green parsley.

INGREDIENT:

-a teaspoon of paprika

METHOD OF PREPARATION:

1.Prepare the wings: wash them and dry them with paper towels. If you want, you can cut them in half.

2.Put the prepared wings in a deep bowl. Add a teaspoon of salt, ½ teaspoon of paprika, ground black pepper to taste, ½ teaspoon of hop sunni / chicken spices and a tablespoon of fermented cream.

3. Mix very well, spreading the spices and cream on all the wings.

4.Prepare the potatoes: clean them, wash them and dry them. If they are large, cut them into 2-3 pieces. If they are small, leave them as is.

5.Put the prepared potatoes in a deep bowl. Add ½ teaspoon of salt, ½ teaspoon of paprika, 1/3 teaspoon of turmeric, ground black pepper to taste and 2-3 tablespoons of oil.

6.Mix very well so that you spread the oil and spices on all the potato pieces.

7. Allow the wings and potatoes to marinate for 30 minutes.

8. Transfer the potatoes with the juice, which they released, in a deep pan, greased with oil. Spread them in a single layer.

9. Place the fins on their surface.

10.Insert the tray in the preheated oven to 190 ° C and bake the dish for 60-80 minutes. About halfway through the baking time, when the wings are browned, remove the tray from the oven and turn them on the other side. Then continue to cook them until the potatoes are ready.

11. Serve the baked potatoes and wings with fresh vegetable salad.

This dish is juicy and delicious. The potatoes are very soft, and the wings have a reddish and appetizing crust!

Chicken ciulama with cream

The chicken ciulama recipe is the one we all know from childhood. It seems complicated, but it is one of the simplest traditional Romanian recipes. To cook this dish, you need:

& # 8211 200 ml cream (not very greasy)

& # 8211 a bunch of dill (or parsley, as desired)

After heating the oil in a pan, add the chicken legs and let them brown over medium heat, lightly and evenly.

Meanwhile, place the finely chopped onion in a saucepan and let it harden until it becomes glassy. Add the flour and chew well. Pour 150-200 ml of water and continue to stir. Add the chicken legs to this bowl and simmer for 1-15 minutes, stirring frequently.

At the end, add the cream, chives, salt, pepper and let it boil for another 10 minutes. A minute or two before turning off the heat, add the finely chopped dill (or parsley).

Chicken ciulamaua with cream can be served with polenta and hot peppers.

  • 2 tablespoons oil
  • 1 teaspoon with a pinch of salt
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon chili flakes
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons honey or agave / maple syrup (I used agave syrup)
  • 1 teaspoon Dijon mustard tip
  • 2 tablespoons balsamic vinegar
  • 1 large clove of garlic

For example, nutmeg, which we love, but I know for sure that there are people who do not like it, you can remove it or you can replace it with a spice that you especially like. Powdered ginger can also be removed and replaced with fresh, finely grated ginger (about 2 cm. Of ginger root). If you have children at the table, you will probably want to remove chili flakes, etc.

2. Put the sliced ​​and well-cleaned chicken wings in a bowl, sprinkle with 1 tablespoon of oil and mix. Separately, mix all the spices and salt and sprinkle over the wings, mixing well, to be evenly covered with spices. Cover the bowl and leave at room temperature for 30 minutes. Meanwhile, heat the oven to 200 ° C, ventilated.

Note: The indicated cooking time (45 minutes) also includes this waiting time of 30 minutes.

1. In a saucepan, put the honey or the syrup used. I used agave syrup because it has a very low glycemic index, but it has the quality of caramelizing. Then add the balsamic vinegar and 1 tablespoon of oil.


2. Add 1 teaspoon of Dijon mustard to the pan and grate finely / crush the garlic, adding it over the other ingredients.


3. Put the pan on high heat, stirring constantly, and bring to a short boil. As soon as it boils, turn off the heat and set aside.

4. With a brush, spread the glaze on the wings, turning them on both sides.

5. Put the tray with the glazed wings in the oven for another 10-15 minutes, until the glaze dries well, caramelizes and the wings become incredibly crispy.
