For the beginning I prepared the countertop.
I put baking paper in the large tray of the 35x35 cm stove. I separated the yolks from the whites. I mixed the yolks with the sugar and added hot water to make the sugar dissolve more easily. I whipped the egg whites with a pinch of salt. Over the yolk foam I put flour mixed with baking powder, oil and egg whites. I mixed lightly with a whisk.
I put the composition in the prepared tray and put it in the oven at 180 degrees for 30 minutes. I let the countertop cool, then straightened the edges and cut it in half lengthwise (or width, it's the same thing).
I put the cherries in sugar until they softened and left enough syrup. I used the syrup to syrup the biscuits.
I mixed the whipped cream and put it in the fridge. I hydrated the gelatin with a little cold water.
I mixed the 3 eggs with the sugar with a fork, then I cut the gelatin into cubes and put it over the eggs. I put the bowl on the steam bath until the gelatin melted, stirring all the time. At the end I added vanilla and orange peel. I let it cool, then I mixed the mixture. I put it in the fridge for a few minutes, not too much otherwise it will harden too much.
I took it out of the fridge and mixed it with whipped cream.
For assembly I put a sheet of countertop, half of the cream, the drained cherries, the biscuits syruped with cherry syrup, the rest of the cream, cherries and the second sheet of countertop. I melted the chocolate on a steam bath and put it on top.
For decoration I used some chocolate cherries.
