For the shells: mix flour + salt + sugar.
In a bowl on the fire we put the butter + water until boiling.
Set aside and pour all the flour, stirring vigorously.
Put it on the fire again and stir until the shell comes off the walls of the pot.
Put the mixture in a bowl and mix it at low speed to cool the crust.
When it has cooled, add eggs that have been lightly beaten before.
Sprinkle in the weight tray.
Bake in a well-heated oven over high heat for 15 minutes then 30-40 minutes over medium heat. We do not open the oven door. They will leave.
After we put out the fire, we leave them in the oven with the door ajar for 15 minutes, so that they dry well.
After they have cooled, cut the lids, fill with cream, put the swan neck, cut the lid into 2 (wings) and powder with sugar.
We make the necks out of the same shell, some sticks, S's. I didn't get them right.
Cream: it is made according to the instructions on the envelope, but it would be better to put less milk to make it thicker.
