  • 200g self-raising flour
  • 200g caster sugar
  • 200g margarine, melted
  • 3 eggs, beaten
  • 100g unsweetened cocoa powder
  • 200g milk chocolate
  • milk as needed

MethodPrep:15min ›Cook:20min ›Extra time:1hr setting › Ready in:1hr35min

  1. Preheat oven to 150 C / Gas 2. Line fairy cake (bun) tin with paper cases.
  2. Mix together margarine and sugar in a large bowl. Stir in eggs. Sift in flour and cocoa and fold to combine. Stir in a few drops of milk.
  3. Pour into prepared tin and bake in preheated oven for 20-25 minutes. The cakes are ready when a skewer inserted in the middle comes out clean. Allow to cool on wire rack.
  4. Meanwhile, melt chocolate in a double boiler. Spoon over the cakes and let set.

Lovely! Great to make with the kids too. I cut out the tops and spoon in some black cherry jam. Pop the tops back on and cover with vanilla butter cream for a very yummy black forest cup cake.-22 Feb 2012

In honor of this special day, we’ve asked an expert in the matter, The Green Fairy, to share some of her favorite celebratory recipes.     Classic chocolate cupcakes

    Ingredients

    • self-raising flour 150g
    • cocoa powder 50g
    • golden caster sugar 200g
    • unsalted butter 100g, softened and cubed
    • egg 1 large
    • whole milk 100ml
    • vanilla extract ½ tsp

    CHOCOLATE BUTTERCREAM

    • salted butter 100g, softened and cubed
    • icing sugar 150g, sifted
    • cocoa powder 25g
    • whole milk 2 tbsp
    • dark chocolate 50g, melted and cooled (optional)

    Method

    Heat the oven to 180C/fan 160C/gas 4 and line a 12-hole muffin tin with muffin cases. In a bowl combine the flour, cocoa powder and a pinch of salt, and leave to one side.


    The Famous Drinking Chocolate Cake is the result of passing around a recipe between friends, with each friend adding their own mark on the recipe.

    The original recipe was Anita's recipe and is supposed to be quite old, which is borne out by the fact that the original recipe is in Imperial measurements.

    This "famous" cake is baked and served in its many guises at mutual friend's parties, and my own addition to the recipe is the Galaxy chocolate filling and icing, as well as using Galaxy drinking chocolate and adding walnuts.

    This makes the loveliest, lightest and moistest chocolate sponge cake you have ever tasted.

    Ingredients

    • CAKE:
    • 5 ounces (150g) SR flour (double sifted)
    • 3 ounces (75g) Galaxy drinking chocolate (or any other drinking chocolate such as Nesquick, Cadbury's etc)
    • 2 teaspoons baking powder
    • 6 ounces (180g) caster sugar
    • 7 ounces (200g) soft margarine (I used Stork margarine)
    • 3 large free-range eggs
    • 3 tablespoons hot water (not boiling)
    • CHOCOLATE ICING:
    • 8 ounces (225g) Galaxy chocolate (broken into pieces, or chocolate of your choice)
    • 4 1/2 fluid ounces (125ml) double cream
    • 5 ounces (150g) softened butter (unsalted)
    • 8 ounces (225g) icing sugar (double sifted)
    • OPTIONAL:
    • 3 ounces (75g) walnuts (some kept whole for decoration and the rest roughly chopped)

    Instructions

    1. Pre-heat oven to 175C/Gas Mark 4. Grease and line two cake tins measuring 20cms/8&rdquo. (Or one cake tin of the same diameter, but deeper)

    2. Whisk all of the cake ingredients together, except the hot water, until light and fluffy for at least 3 minutes. Then add the hot water and whisk again for 3 minutes until the cake mixture is extremely light and fluffy.

    3. Divide the cake mixture between the two prepared cake tins (or one cake tin if using) and bake for 20 to 30 minutes, or until the cakes are firm to touch and well risen. (You can also check by inserting a skewer into the middle of the cakes, and if the skewer is clean when taken out, the cakes are cooked)

    4. Allow the cakes to cool in the tin for a few minutes, before carefully turning them out on to a wire cooking rack. Allow to cool completely before filling and icing.

    5. Meanwhile, make the icing/frosting. Sit a bowl over a pan of simmering water and add the Galaxy chocolate and cream to the bowl and gently melt, stirring all the time until the chocolate and cream are blended and smooth.

    6. Remove the chocolate and cream from the heat, then add the butter to the hot chocolate and cream mixture, stir it until smooth. Sift in half the icing sugar and mix well, add the remaining icing sugar and mix until very creamy and smooth. Set aside to cool until thickened.

    7. When you are ready to ice and fill the cakes, spread half of the icing/frosting over one of the cakes, and then place the other cake on top. (If using the walnuts, sprinkle the chopped walnuts over the icing before placing the cake on top)

    8. Gently swirl the rest of the icing/frosting over the top of the cake, pipe it on if you wish, and then decorate with walnuts if using. You can also add jam to the filing cherry jams are lovely, or add some fresh fruit to the filling as well as decorating with fresh fruit on top.

    9. Serve in thin slices with tea or coffee.

    You can freeze the sponge cakes before icing.

    I have made this cake in the past with fresh whipped cream and fresh fruit, as well as a base for that old retro classic Black Forest Gateau.

    • 100g butter, softened
    • 100g self raising flour
    • 100g caster sugar
    • 2 eggs
    1. Preheat oven to 180°C/160°C fan/Gas Mark 4.
    2. Get the kids to help weigh the ingredients, then add them to a large mixing bowl. Whisk all the ingredients together until creamy. Spoon into bun cases in a cupcake or muffin tray - this recipe should make 12 fairy cakes or 9 slightly larger cupcakes.
    3. Cook for about 10-15 minutes - to check they are cooked just press gently and they should spring back. Leave to cool in the tin for 5 minutes before leaving to cool completely in their cases on a wire rack.
    4. Once cooled, the cakes can be decorated with all different types of icing including glace icing or delicious buttercream icing

    Mini Chocolate Cakes!

    A Delicious, Light, and Moreish version of one of my Favourites! Mini Chocolate Cakes! Chocolate Sponge, Chocolate Buttercream, Chocolate Drizzles!

    So after making and posting my Mini Victoria Sponge Cakes the other week, I knew I had to post the Chocolate version. In all honesty I baked them on the same day as the Mini Victoria Sponge Cakes as these were also part of a mini Afternoon Tea I baked for, but I didn’t want to post them on the same day. I am quite a fan of Mini Cakes now after these two recipes, and all I want to do is bake in mini. Literally I want EVERYTHING in Mini!

    I decided to base this recipe on my Chocolate Cupcakes recipe as its a classic, and it always bakes perfectly for me. These Mini Cakes when baked into the special tin, can sometimes take a little less time to bake in comparison to baking in cupcake cases. I’m not sure why, but they’ve always baked a little quicker for me! I do love these tins though. They’re perfect for Mini Cakes, Cheesecakes, and more.

    I decided to drizzle over some chocolate as I wasn’t too sure how to decorate these cakes. I usually decorate Cupcakes with Buttercream on top, and then a chocolate bar of sorts for example. However, with these, I didn’t want to put buttercream on top as well as I thought it would be too much. You will probably still have some buttercream left over so be warned! (If in doubt, buttercream does freeze well!)

    You can use any cocoa powder you like in chocolate cakes, but supermarket wise Bournville is my favourite! It gives such a lovely chocolate taste. The one I buy from Makro/Online is the Cacao Barry Extra Brute one and its delightful. Yes, it is quite expensive, but its a big bag and its definitely my favourite cocoa powder ever! The lucky thing is though, these recipes are so adaptable it honestly doesn’t matter too much! Either way, I hope you love this recipe as much as I and my friends did! Enjoy! x


    Directions

    Step 1 Pre-heat oven to 200C/400F/Gas 6 and grease 6 mini bundt tins or silicone moulds with cake release spray.
    Step 2 Place the flour, butter, sugar, eggs and the vanilla milk into a bowl and mix with a handheld whisk for 2 to 3 minutes, until cake batter us smooth, light and airy. You can also use a food mixer - mix for 2 to 3 minutes on medium speed.
    Step 3 Pour or spoon the cake batter into the prepared bundt moulds and bake for 15 minutes, or until the cakes have risen and are golden brown.
    Step 4 Allow them to cool for a minute or two before turning them out onto a wire cooling rack.
    Step 5 When they are cold, place the cakes on a cake stand or platter, you may need to trim the bottom of the cakes so they sit straight as they may have risen a lot in baking. (Eat the scraps of cake, as I did!)
    Step 6 Pour the melted white chocolate and cream mixture over each mini bundt cake and allow some of it the drizzle inside the centre cavity. Arrange some mini eggs on top and then sprinkle the hundreds and thousands over the cakes.
    Step 7 If you don't have any mini bundt cake moulds or tins, then use a muffin tin or a fairy cake bun tin lined with paper cakes if you like.

    Antler Cake Stand

    So, this cake stand that I was so determined to use that I rebaked the cake layers… it’s borderline tacky, I know, but it just screams holidays and winter and Christmas, and I had to have it. The deer antlers go so well with the woodsy-like exterior of this cake.

    Apparently, it’s actually not a cake stand at all. I literally found this out just now as I was looking it over for info to see if I could find it online to link to you (I couldn’t), but the one thing I did find was some safety precautions for a pillar candle. Lol, oops.

    Anyway, this candle holder moonlighting as a cake stand works pretty well, no? I think so. Except when it came to putting the cake in there and then cutting a piece out. The antlers did not make my life easy there, but it worked out in the end.

    I’m happy about the texture on the frosting. It reminds me of tree bark, and I just love this rustic woodsy look for the holidays. It was actually really simple to do.

    Once I frosted the cake and smoothed the sides, I used this icing comb (the grooves on the bottom) to make the texture.

    I pressed it into the side of the cake and spun the cake on my turntable. I went over it a few times to create a more rustic and messy look.

    Since the cake was chilled before the final frosting, the ganache would start to firm up on the cake which made it easier to create the texture.

    I decided to go for 6 layers with this cake, and I’m so glad I did. The cake is incredibly rich and delicious, with hints of gingerbread throughout, and the silky dark chocolate ganache makes for a perfect pairing in this Chocolate Gingerbread Cake.
