Salmon with sweet mustard sauce

  • For the preparation you need the following ingredients:
  • 2 salmon fillets (150 g serving);
  • 2 tablespoons vegetable oil;
  • 2 tablespoons parsley;
  • 2 tablespoons dill;
  • 2 green onion strands;
  • a pinch of salt and pepper.
  • For the sauce you need the following ingredients:
  • 2 tablespoons Dijon mustard;
  • 1 teaspoon mustard with whole grains;
  • 4 tablespoons acacia honey;
  • 1 tablespoon soy sauce;
  • 1 teaspoon ground black pepper;
  • 1 tablespoon olive oil.

Peel the dill and parsley. Cut green onions into 5 cm long pieces.

Put the Dijon mustard in a bowl, add the mustard with whole grains, soy sauce, honey, ground pepper, olive oil, then mix well until all the ingredients are integrated into the composition and obtain a homogeneous sauce. At this point, you have all the ingredients ready to prepare the salmon.

Season the salmon with salt and pepper on both sides. Put the vegetable oil in a pan (with a metal handle, so you can put it in the oven) and let it heat over medium heat.


Add the salmon pieces to the pan and brown them for 1 minute on each side. After browning them on each side for 1 minute, place the pan in the preheated oven at 150 degrees and leave in the oven for 10 minutes.

After the 10 minutes have elapsed, take the pan out of the oven and leave the salmon in the pan for another minute. Then put the sauce on the plate, add the salmon fillet over the sauce, pour over the salmon in plenty of sauce, then sprinkle greens on top (parsley, dill, onion). It can be served with a garnish of natural potatoes or rice.

I took an oven dish and greased it with a little oil. I preheated the oven to 180 degrees C.

I washed the salmon slices, greased them with a little oil and sprinkled them with salt, then I placed them nicely in the tray. I put over 1/2 of the orange juice (I sprinkled the fish) and I added a little water in the pan, enough to cover 3/4 of the fish. I put a baking sheet and put it in the oven for about 30 minutes, until the fish penetrates well.

When the fish is well penetrated, we take enough baking paper to catch a red face. When the fish browned slightly, I turned it on the other side for 1-2 minutes, no more.

Meanwhile, prepare the sauce, mixing the ingredients: mustard, honey, oil, lemon juice and orange juice. Put this sauce over the salmon and leave it in the oven for another 2 minutes.
I then took it out of the oven, prepared a green salad and put the fish next to the salad on a plate. The meal is served!

For appearance you can decorate the fish with a few slices of orange or lemon.

The preparation is not difficult at all, the only aspect you need to pay attention to is that the parsnip puree is ready at about the same time as the salmon or keep it warm until the fish comes out of the oven.

SALMON ROLL WITH MUSTARD SAUCE

I like salmon very much and I buy it quite often to prepare another recipe from the countless options that come to mind at the moment and depending on what I have in the fridge.

The salmon roll with dill and mustard sauce is among my favorites, it is delicious and can be prepared very easily if you have only a few ingredients at hand.

ingredients:

  • 400 gr. salmon fillet
  • 3 & # 8211 4 dill threads
  • 2-3 fennel leaves (optional)
  • 2 slices of lemon
  • salt and pepper to taste
  • 2 tablespoons Dijon mustard
  • juice from half a lemon
  • 3 & # 8211 4 tablespoons olive oil
  • 1 pinch of salt

The first step I take is to clean the salmon fillet well from the scales, then wash it and remove the skin from above.

I make a transverse slit starting from the middle to the sides so as to thin the fillet to even out its thickness and obtain a larger size, then I season it with salt and pepper.

Sprinkle on both sides freshly chopped dill and 2-3 fennel leaves, squeeze a few drops of lemon juice from the slices I put on top and roll the fillet as tightly as possible.

I put a piece of baking paper over an aluminum foil, wrap the roll and squeeze it very well at the ends.

Cook gently in the oven at 175 ° for 20 minutes.

In the meantime, I take care of the sauce for which I mix well 2 tablespoons of mustard with the juice of half a lemon. I add the oil little by little while stirring constantly, and at the end I sprinkle a pinch of salt.

I quickly make a garnish of whole wild rice and a few carrots that I boil together with the rice for an additional flavor.

On the final plate that already emits the enticing smell of salmon with dill, I decided to add a little radish salad. I really like this combination… Mmmmm!
