Banat pancakes

We soak the raisins in 3-4 tablespoons of brandy.

Mix ricotta with 50 g sugar and 1 egg, then add the raisins and a little lime peel.

With this cream cheese we fill the pancakes and close them at the ends, then we roll them, we do this with all the pancakes, then we grease a tray with butter and we place them nicely in it.

Separate the egg whites from the remaining 4 eggs and mix the yolks with 100 g of sugar until they become creamy, then add the sour cream and 1 sachet of vanillin and mix a little more.

We put the obtained cream in the pan over the pancakes, then we put it in the oven heated to 180 ° for 5-10 minutes with the oven slightly open (enough for a wooden spoon to enter), during which time we prepare the meringue.

Mix the egg whites with the sugar, 1 pinch of salt, lemon juice and 1 sachet of vanillin until they form spikes.

When the meringue is ready, take the tray out of the oven and put it over the pancakes, and with a fork shape the meringue a little, then put it back in the oven (also with the door slightly open) until the meringue browns nicely.

We serve hot or warm pancakes in my case.
