Austin’s One Taco is Giving Us Something to Taco ‘Bout

The Live Music Capital of the World welcomes One Taco! Owner Axel Beverido, a native of Veracruz, Mexico, opened this eatery just last month. An engineer by trade, he discovered that the tacos he tasted in Austin neighborhoods were more geared towards Tex-Mex cuisine.

He grinned while explaining that, “True Mexican tacos should not be topped with lettuce, sour cream, and grated yellow cheese.” Throughout the years, Mr. Benavido has been searching for that magical taste that would transport him back to childhood. This concept turned into a reality when he introduced the first One Taco food truck located downtown on 6th Street and Neches. A popular hotspot for techies and night life enthusiasts, success followed suit to finally open its first brick and mortal location in northwest Austin.

The restaurant is casual and sectioned in four stations: a tortilla factory, fresh market ingredients, bar, and taco stand. It has an open kitchen where guests can see dishes prepared. One Taco offers two fresh salsas: red chipotle and verde jalapeño serrano. With the mission of providing authentic Mexican cuisine to patrons, this hotspot does not disappoint.

Menu includes authentic Mexican dishes such as tacos al pastor, gringas, quesadillas, and carne asada. Fresh traditional beverages such as limeade, jamaica (hibiscus), and horchata are the perfect non-alcoholic pairings for each dish.

On the other side of the counter is an experienced tortilla maker who everyone can watch roll, pat, flatten, and heat every single tortilla. The dish featured is five de Pastor: five small corn tortillas, marinated rotisserie pork, onions, cilantro, and pineapple.

Upon taking the first bite, the superstar ingredient was undoubtedly the handmade corn tortillas. The end result is a soft, chewy, and perfectly consistent foundation to support the meats and fillings. This new kid on the block is doing something right, and gives us something to taco ‘bout.
