Cherry Pops

Believe it or not, you don’t need a special gadget to pit cherries. Work over a bowl to catch all the precious juice! How much lime juice you add will depend on how sweet your cherries are, so taste as you go.

Ingredients

  • 4 cups pitted cherries (about 1 ½ pounds)
  • 1/3 cup sugar
  • 1–1 ½ tablespoons freshly squeezed lime juice

Directions

Pit the cherries and place in a large bowl. Toss with the sugar and let sit until the cherries release their juice, about 15 minutes. Purée the mixture in a blender until smooth, and then add the lime juice to taste.

Pour the mixture into ice pop molds and insert sticks. Freeze until firm, at least 6 hours or up to 1 week.

To unmold the pops, run hot water over the outsides of the molds for a few seconds, then gently pull the sticks.


Summer is in full swing and it is hot out!

When the heat goes up I really don’t feel like spending much time in the kitchen cooking hot meals. I find myself wanting simple and quick meals that don’t require turning on the oven. And frankly, all I really want is hydrating drinks like strawberry switchel, strawberry cucumber lemon water, hibiscus strawberry iced tea, agua frescas and lots of cold frozen treats like popsicles.


Cherry Popsicles with Coconut Milk

Boozy ice pops have been one of our secret addictions for so long now that rarely do any of our clients or workshop attendees leave without a lick. The popsicles are what makes our shoots, workshops and gatherings so fun. Sometimes at the end of a long hot day, treating yourself to an ice pop is something truly wonderful. It&rsquos like being a kid again and enjoying something that is not only cool and refreshing, but it&rsquos also so much fun to eat. Every time we offer someone a popsicle, their eyes light up, a hug smile comes across their face and they feel like a big kid.


Cherry Popsicles

Ingredients:

Method:
In a blender (I use the Ninja Prep System but I’m dying for a Vitamix) combine ingredients and blend until smooth. I added a splash of water as well because my cherries were frozen (read: how to flash freeze cherries) and I wanted them blend thinner. Taste and adjust the maple syrup if desired. I found that 2 tsp was enough for us.

Pour into popsicle mold and freeze.

*Note: my popsicle molds are a little on the smaller side so I did have some left over. It worked out perfect because I just added some almond milk and Vanilla Shakeology and breakfast was done for the day as well. Two treats in less than five minutes!


I used vanilla almond milk in this recipe. If you prefer to use regular milk or regular almond milk, that&rsquos okay too, but they won&rsquot have as much vanilla flavour. I totally recommend the vanilla almond milk, though if you can get your hands on it.

If you don&rsquot have vanilla almond milk, add a little more vanilla extract. It&rsquos better to add a little at a time (drops) and taste before freezing.

For this cherry recipe, I used frozen pitted cherries. You should be able to easily find in the frozen fruit section of your supermarket.

I used 5 ounce molds and yielded 5 ice pops. If your molds are larger or smaller, the quantity of ice pops you yield will vary.

I didn&rsquot add any extra sugar to these ice pops. For me the flavour was sweet enough. However, if you like things a little sweeter, add maple syrup to taste.

Not only do these cherry vanilla ice pops taste fabulous (I mean, really good), the colour is just so stunning, don&rsquot ya think?

Cherry Pie Pops

In large bowl, stir flour and salt together. Using a food processor or fork, cut butter and shortening into flour until mixture resembles cornmeal. Add 8 tablespoons cold water and combine until mixture holds together in large clumps. Add additional water tablespoon by tablespoon if the dough is still dry. Divide dough into two discs, cover with plastic wrap and chill at least 1 hour.

Preheat oven to 400°F. Prepare cookie sheets with parchment paper.

In small bowl, beat egg with 2 tablespoons water until well combined.

Roll each pastry disc to about 1/8 in. thick. Using a 3 in. circle cutter, cut circles. Use leftover dough to reroll once and cut additional circles, for a total of about 30 circles.

Place 15 circles on prepare cookie sheet, spacing a least 2 inches apart. Strain cherry pie filling until most of the liquid is removed and discard liquid. Spoon about 1 tablespoon of cherry pie filling on top of each circle. Place a lollipop stick in the center of the filling. Brush the edges of each circle with the egg mixture. Place a second circle on top and use a fork to seal the edges. Seal area around the stick well.

Brush the top of each circle with the egg mixture and sprinkle with Sparkling Sugars. Using a knife, cut a small ‘X’ in the center of the pie.

Bake 28-30 minutes or until crust is golden brown. Serve warm or at room temperature.
