Before it called for rye whiskey, the New Orleans classic was made with cognac.
- 1/2 oz Absinthe
- 2 oz Cognac
- 1/2 oz Simple syrup
- 3 dashes Peychaud's bitters
- Garnish: Lemon twist
Rinse a chilled Old Fashioned glass with the absinthe, fill with crushed ice and set aside.
Add the remaining ingredients into a mixing glass with ice and stir.
Discard the ice and any excess absinthe from the prepared glass and strain the drink into it.
Garnish with a lemon twist.
