How to cook potatoes to have a healthy menu
Potatoes were originally grown in South America 10,000 years ago. Spanish explorers introduced them to Europe in the early 16th century. So, when I said that they seem to be the national food of Romanians, I didn't really speak. But I was serious when I said that they are very consumed in Romania, because they are extremely versatile. You can eat them as a side dish with any meat dish. During fasting periods, they are also present almost daily on the tables of the faithful.
Among the most common potato dishes are potato soup, mashed potatoes and potato food, all of which can be vegan (fasting) or not. But how else can you cook more potatoes, so that they are delicious, if you don't want to fry them?
1. Cream of potato soup with vegetables
A classic vegetable cream soup can be made from potatoes, carrots, peppers, onions and zucchini. All this, well cooked and then blended in a blender, with a little butter or cooking cream, then seasoned simply with salt and pepper. Croutons are optional.
The role of the potato in cream soups is to bind the composition and make it slightly elastic. Therefore, the potato is used in almost any cream soup, regardless of whether it is the star ingredient or whether it has peas, celery or other vegetables in larger quantities.
2. Potato salads
The classic oriental salad has boiled potatoes, onions, olives, and dressing. This is the fasting option, but it can be improved with either raw vegetables such as tomatoes, cucumbers, peppers and green onions, as well as boiled eggs or smoked fish.
But you can make a lot of boiled potato salads, so you have a healthy, full and tasty meal. When it comes to potato salads, only imagination is the limit. You can use avocado, different types of cheese, pancetta, prociutto crudo, sos pesto or a simple vinaigrette and aromatic herbs such as dill or parsley.
Also, potato salads are not necessarily made using boiled potatoes, but you can also use baked potatoes.
3. Stuffed and baked potatoes
If you want a simple meal, you can wash the potatoes well and peel them with everything, just sprinkle with a little olive oil and sprinkle with salt and pepper. But there are also more sophisticated variants, in which you first bake them whole, then dig them out a little and fill them.
We filled some with eggs and I put parmesan on top of them. But you can use fillings based on meat, fish, cheese or vegetables. Or you can combine them all to your liking.
4. Potato gratin
Gratin is a cooking technique that comes from France and involves covering the dish with breadcrumbs, grated cheese, eggs or butter and then baking.
It's extremely easy to cook au gratin potatoes. All you have to do is cut the potatoes into thin slices and place them in a tray, in layers interspersed with other ingredients. You can choose pumpkin, broccoli, mushrooms, fried bacon, ham or boiled eggs. It is important to use cheese or cheese for any gratin! So, you can cook au gratin potatoes even if you only have potatoes, cheese and eggs at hand. In the spring you can put and leurdă or other spring greens.
5. Mashed potatoes
Instead of fried potatoes in a lot of oil, how about some mashed potatoes? They are extremely tasty with garlic, parmesan and greens. You can serve them as a side dish, but they are also very good as a main course, along with a fresh salad.
To cook mashed potatoes, you must first boil them in their skins. We recommend that you choose smaller potatoes with a thin skin, which you should wash well before boiling. Mici cu cartofi prajiti
Mici cu cartofi prajiti din: carne de vita, cimbru, ardei iute, usturoi, supa de carne, seu de oaie, cartofi, ulei, sare, rosii, marar.
- 1 kg carne macră de vită
- dried thyme
- boia de ardei iute
- zeamă de usturoi
- 1 cană cu supă de carne
- 1 lingură cu seu de oaie
- 1 1/2 kg cartofi
- 1 cană cu ulei
- 1/2 kg roşii
- mărar tocat
Method of preparation:
Treceţi carnea prin maşină de două ori, strângeţi-o în cratiţă mare, săraţi-o, piperaţi-o, puneţi cimbru şi boia iute de ardei.
Frământaţi amestecul până devine omogen, adăugaţi zeama de came şi zeama de la o căpăţână de usturoi şi continuaţi operaţia câteva minute, apoi lăsaţi la rece 1 oră.
De preferat este să ţineţi pasta de mici la congelator. Ungeţi grătarul cu seu de oaie, faceţi mititei cu mâna umedă, apoi frigeţi-i pe toate părţile.
Scoateţi-i pe un platou mare şi serviţi-i cu garnitură de cartofi prăjiţi şi cu salată de roşii, presărate cu mărar tocat sau cu salată de murături, lângă pâine de casă, vin roşu nou sau bere.
