A recipe that my mother invented, out of the desire to give me, as a child, an appetizer as tasty as it is healthy. Fast, cheap, natural and super tasty. You can serve it both on an ordinary day and at a festive meal.

With the help of a mixer, rub the butter well with the cottage cheese (it goes just as well with a lean one and a fatter one). Put the cow / sheep cheese on the grater (if you want, you can even use a combination of the two). Add it, one at a time and stirring constantly with the mixer, over the cottage cheese. Taste, from time to time, not to come out too salty.

Finely chop the onion. Any type of onion works, of course, but it is best to use red onions (the red-white contrast looks very good) or green onions, in season. Add the cream, mix well.

When the cheeses have blended, add the onion and mix well again with the mixer.

The cow's cheese I used for this pudding was a bucket. The yogurt was Greek with 10% fat. If you do not like raisins then you can put dehydrated cranberries or cubes of other candied fruits (orange peel, apricots, plums, cherries, etc.).

6. Spread a glue, make an incision in the middle, cover it with the second half and glue the edge.

7. Add the filling, cover it on both sides with dough and glue the edge until you get a triangular pate.

8. Form all the pies in this way, place them in the form, cover them with plastic wrap and leave them to rise for 20 minutes.

9. Beat the yolk with milk, grease the pie and sprinkle with sesame seeds.

10. Bake in a preheated oven at 180 ° C for 30 minutes.

A recipe with a lot of taste and texture! You can experiment with the filling: potatoes or meat.


Focaccia with cheese

1. For the dough: Sift the flour into a bowl and add the yeast, salt and sugar. Pour 300 ml of warm water and knead well until you get a firm dough.

2. Divide the dough in half and spread each piece so that it fits in the tray you will use.

3. Put a piece of dough in the pan and grease with a little water. Arrange the mozzarella slices, then sprinkle with Gorgonzola and basil leaves. Place the other sheet of dough on top, pressing firmly on the edges.

4. Cover the dough with cling film with oil or a clean kitchen towel. Leave the dough in a warm place for 60 minutes, until it doubles in volume.

5. Preheat the oven to 200 degrees.

6. Uncover the dough and make a few dips with your fingers on the entire surface. Grease with olive oil and sprinkle a few rosemary leaves. Suitable for salt.

7. Bake for 30 minutes or until browned.

8. Remove from the oven, grease with a little olive oil and serve immediately.
