Re: Greek style tomato sauce

Very good, that's how I make it, but I don't flavor it with a score, I think it has to be special and it gives a special taste to the food. .

Re: Greek style tomato sauce

Mine turned out quite sour. I trained him with a spoonful of honey, but I'm afraid he didn't spoil his "original" taste.

Re: Greek style tomato sauce

Eli, the tomatoes are to blame. they must be well cooked when you make tomato sauces / broth, otherwise they come out too sour. You can straighten it with a little sugar, which, unlike honey, does not change its taste, but it also cuts off the acidity.

Re: Greek style tomato sauce

Hi Ioana. How long can the sauce be stored in the refrigerator? Is there a variant of this recipe that can be preserved / kept for the winter? Thank you in advance.

Re: Greek style tomato sauce

Ioana, I come back with the same question: how long can it be kept in the fridge? Can it be frozen? I make it now and I found that for the basic recipe I need quite a bit-80 ml I'm thinking of freezing the rest.

just like that in the fridge. but for a longer period it can certainly freeze. it is best to freeze it in portions.

Re: Greek style tomato sauce

Ioana, Thank you! In the meantime I made it, but something was not ok, I think oregano should not be put in the sauce from the beginning / boiled. The sauce came out bitter. Maybe it's because I let him down more — I think I walked for an hour. Maybe I should have put less, even though I followed your instructions, maybe it's something else to blame and I don't realize what I did wrong. I made it with pastata, at this time, but I tasted it and it was OK, sweet.
Finally, I put a can of diced tomatoes and I seasoned it with baking soda, added little by little and let it boil a little too to figure out what effect it has on the taste. Long live Google! -) It has flattened the taste and it doesn't feel so bitter, but the taste is lighter. Next time I don't put oregano, or I put it at the end. Or maybe put fresh. What do you think? What do you advise me?

Re: Greek style tomato sauce

some greens may be bitter. I suffered something like that but only with a mixture of purchased Provencal herbs (it seemed to me that lavender in the mixture was the problem). of the good oregano.
you can add oregano at the end, but not even at the last minute, to still have time to leave its flavor.
baking soda is for reducing acidity as far as I know. were the diced tomatoes you added extra sour? try to buy whole canned tomatoes that you can crush / chop. the diced ones or even some sauces may taste weird.
can you taste dried oregano now to see how it is?

Baked chicken legs with garlic and rosemary

Baked chicken legs with garlic and rosemary. Roast chicken, red and juicy chicken legs, flavored with garlic, onion, tomatoes, cumin and rosemary. If I make the steak, it is clear that I thank every member of the family, from small to large.

The good steak is the tender and juicy one, which I generally make from large pieces of meat (whole chicken, good piece of meat, pork neck, beef antricot). I don't like sliced meat steaks, sliced chicken breast, boneless thighs & they look dry. And here I chose some very big thighs, with back. The bone also gives a special flavor to the steak and so the meat remains tender, juicier.

At these Baked chicken legs with garlic and rosemary they do not use extra fat because their skin is oily enough. The fat in it will melt and the skin will turn beautiful.

I don't even boil the meat before, regardless of the piece, all the flavor and fat would come out, then the meat cooked and fried in another fat (oil, lard) would not have the same flavor.

Method of preparation

We clean the fish from the intestines, remove the heads, tails and wings and wash it very well with cold water. We salt and pepper it and sprinkle it with lemon juice. We leave it like this for at least half an hour in the fridge, then we drain it and dry it with a kitchen towel.

Tomato sauce: Heat the oil in a saucepan and add the onion and chopped garlic. When it softens, put the peeled and diced tomatoes. Heat them together for 2-3 minutes and add the pepper paste diluted in white wine. Add bay leaf, basil, salt and pepper. Let it boil for a few minutes, then transfer it to a tray. Place the fish over the sauce and put the tray in the preheated oven over medium heat. While the fish is in the oven, it should not be turned over, it is only brushed from time to time with the sauce from the tray. Leave it in the oven for about an hour and a quarter, until it browns nicely. Five minutes before it is ready, add the lemon slices and finely chopped greens.

Baked mackerel with tomato and garlic sauce

The fish cleans very well of intestines and debris. We remove the heads we give to the kittens. :) Yes
