I quickly invented this combination of vegetables, this week being in a more low-calorie food program I sit and I often wonder if you can make something very tasty and low in calories? The answer is not always yes but this time I managed to find a compromise.
It occurred to me that I would eat something very fragrant and then I immediately thought of fragrant forest mushrooms, something without many calories beans (24 kcal per 100 grams the ones I had).
- For 2 servings you need:
- 400 grams of yellow bean pods (96 kcal),
- 200 grams of forest mushrooms (62 kcal) (mixture of mushrooms, mushrooms, ghebe and frozen yolks I had you can make any combination you want),
- half a red pepper (50kcal),
- a tablespoon of olive oil (83 kcal),
- shredded parsley
Preparation time: less than 15 minutes
RECIPE PREPARATION Yellow beans with forest mushrooms:
Preparation: In a wok-like pan, put it in a tablespoon of olive oil (I don't give it up because it has the necessary trace elements and fats), I put the yellow beans with a little salt and pepper in them and I added the forest mushrooms.
Add a cup of water and let it boil for 10 minutes with the lid on well. After 10 minutes I added the larger square cut pepper.
Let the pepper penetrate for another 4-5 minutes and let the water drop, add more salt at the end if necessary, I added another ginger thread. The mushrooms give it a special taste and leave a kind of sauce. It turned out excellent, enough for 2 servings and in total did not collect more than 291 kcal the whole amount. When I served, I sprinkled a little fresh parsley on top.

Pea beans stewed with garlic it is one of my favorite foods, but my boy loves it too. When I was a child, I would go with my grandmother to the garden to gather pods (pastors in the dialect of the area), and I would take 2-3 carrots and a few heads of garlic from the ground.
I came back to the valley, to the summer kitchen, with the fish (aprons) full of fresh and tender vegetables.
I always forgot to tell you, when I went to the garden, I took a handful of big salt from the salt shaker (a wooden box, with a lid, hanging on the wall, always full of coarse salt).
We harvested cucumbers, sour plums, unripe tomatoes, tomatoes, and we ate them like that, unwashed, just wiped off the pestle and soaked in salt.
God, what a wonderful taste they had! Taste of sun, freshness and childhood.
We really like beans and I prepare it in dozens of recipes, but I also preserve it for the winter.

Put the beans, potatoes, sliced carrots, oil and a little water in a pan or frying pan. Sprinkle with salt, put the lid on and leave on high heat.
After our food bean pods stewed with garlic, bring to the boil, reduce the heat and simmer over low heat.
This is the great secret of this dish: it is cooked over low heat, smothered in small amounts of water and oil. From time to time, add another cup of water when it decreases (100-150 ml).
Tip for the best bean stewed with garlic:
Wide pods are better for this food, not the fidelita ones, because they are more meaty.
There are housewives who boil beans in a lot of water, but the result is some beans that are fluffy, watery and without sweetness. It's not soup! & # 128577
Prepared in this way, stewed, the pod beans remain tender, slightly crunchy and with a special sweetness. Put the salt from the beginning, because in this way, it will remove the water from the pods.

Leave it for about 30 minutes and then check a potato and a pod, with a fork: if the fork enters the potato easily, our food is ready.
If it is not ready, leave it until it penetrates well. The total time is 30-40 minutes.

When the vegetables are well penetrated, turn off the heat. Now add the crushed garlic, in which you add a little freshly ground pepper (take 3 fingers). Gently stir the pot so that the garlic penetrates everywhere, then cover with the lid and leave for 15 minutes, then serve.
The freshly ground pepper added at the end is a simple trick, but it will give a special flavor.
This food is wonderful hot or cold, with hot polenta or bread. We like it with hot polenta.

Let's take advantage of the still fresh bean pods. The recipe with mayonnaise is an inspired appetizer.
What you need (picture 1)

Yellow bean salad with beef
Here is a salad of yellow beans, spinach and sun-dried tomatoes in which it integrates wonderfully grilled beef or grilled beef, next to a few halves of red onions. We will serve this happy combination with a sour and a little hot yogurt sauce.

How to clean and scald green bean pods?
If we use bean pods from the jar (ready scalded) we can skip this step. I also have green beans soaked in salted water (see recipe here).
I found in the market some very tender bean pods & # 8211 fidelity type beans, also called "French". I washed it with cold water and put it in a bowl.
Usually both ends of the pods break but, in this case, it was enough to remove small portions from the tail. I don't mind "mustaches" because they are tender.
I boiled about 2 L of water with 3 teaspoons of salt. When it started to boil, I boiled the green beans. It should not boil unknowingly because it swells. Depending on the type of pod, cooking may take 5-7 or 9 minutes. It 's best to test a pod and if it' s done it 's OK! Green beans should not "squeak" in the teeth! It should be soft but have a bit of resistance when we bite it.
I prepared a large bowl of very cold water + a few ice cubes. I took the boiled green beans (with a whisk) directly into the cold water. This process stops the cooking process, preserves the color and texture of the vegetables.
After a few minutes I drained the pods well and left them in a strainer for about 10 minutes.
I cut the bean pods into the right pieces (3-4 cm).
