Ingredients

Crust

  • 1 1/2 cups pecan halves or pieces (6 to 7 ounces), toasted, divided
  • 3/4 cup graham cracker crumbs (about 5 whole graham crackers, finely crushed in resealable plastic bag)
  • 6 tablespoons (3/4 stick) unsalted butter, melted

Sauce and filling

  • 3/4 cup (packed) dark brown sugar
  • 3/4 cup heavy whipping cream
  • 3 tablespoons dark corn syrup
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 2 pints (4 cups) premium vanilla ice cream, divided

Ganache topping

  • 5 1/2 ounces bittersweet chocolate, chopped
  • 1/2 cup heavy whipping cream
  • 1 1/2 tablespoons dark corn syrup
  • 3/4 teaspoon vanilla extract

Recipe Preparation

Crust

  • Preheat oven to 350°F. Using on/off turns, finely chop 1 cup pecans in processor; transfer to medium bowl. Mix in graham cracker crumbs and sugar. Drizzle butter over; blend until evenly moistened. Press mixture firmly over bottom and up sides of 9-inch glass pie dish (not on rim).

  • Bake crust until golden brown, about 12 minutes (if crust puffs, press firmly back into place). Cool crust completely. Wrap in foil and freeze at least 1 hour. DO AHEAD Can be made 2 days ahead. Keep frozen.

  • Bring first 3 ingredients to boil in heavy medium saucepan over medium heat, whisking until sugar dissolves. Boil caramel 5 minutes, whisking occasionally. Turn off heat; whisk in butter, vanilla, and salt. Cool completely.

  • Slightly soften 1 cup vanilla ice cream in microwave on low in 10-second intervals. Spread ice cream evenly in frozen pie crust; spread 1/4 cup caramel over. Freeze pie until ice cream and caramel are firm, about 1 hour. Repeat with remaining vanilla ice cream in three 1-cup portions and caramel in two 1/4-cup portions. Freeze pie overnight. Cover and reserve remaining caramel at room temperature.

Ganache topping

  • Combine chocolate, cream, and corn syrup in medium metal bowl. Place over saucepan of simmering water and whisk until melted and smooth. Remove from heat. Whisk in vanilla and salt. Cool ganache at room temperature until thick but still pourable, about 30 minutes.

  • Pour ganache evenly over frozen pie. Sprinkle with remaining 1/2 cup pecans. Freeze until ganache is firm, at least 45 minutes. Drizzle decoratively with 1/4 cup reserved caramel. Cover and keep frozen. Cover and chill remaining caramel.

  • Let pie stand 10 minutes at room temperature. Rewarm remaining caramel, stirring over low heat. Cut pie into wedges and serve with caramel.

  • To remove the first piece of pie, slide the knife between the crust and the dish all the way around the pie. Then cut out the first slice, being sure to cut through the crust completely.

How to make an easy Edwards turtle pie

The filling is 4 ingredients and one of those ingredients is genius!

For a chocolate pie, you obviously need chocolate in the filling. But adding melted chocolate to the filling base could create a filling that is more runny, meaning it would need something like gelatin to help it set. Which I am not against because I have used gelatin in some of our recipes. However, I wanted to keep this recipe super simple.

So the filling is cream cheese, powdered sugar, cool whip and chocolate spread! Hershey’s sells a container of chocolate spread and you can find it by the nutella, peanut butter, and PB2 at your grocery store.

The filling is spot on in flavor and texture, and totally channels french silk vibes. Add pecans, caramel sauce and chocolate sauce and you have an easy to make turtle pie!

I would recommend freezing this pie overnight if you are able. If not, freeze for at least 4 hours. You won’t be serving the pie frozen, but placing the pie in the freezer will help to set the filling.

Garnish the pie with whip cream swirls (canned or homemade) then top with pecans, caramel sauce and chocolate sauce.

Coffee Turtle Ice Cream Pie

This recipe is an oldie but a goodie. The last time I made a version of it was waaaaaay back in 2009. Y'all. How does time pass so quickly that a loved recipe doesn't make a return for 10 years?

Anyway, I was so happy that Jack pulled it from my recipe archives to have this summer. Mr. E requested an ice cream pie for Father's Day, so the timing couldn't have been more perfect.

My mom used to request a Baskin-Robbins turtle ice cream pie for her birthday every year. I wish I could make this one for her now. ♥

You might have noticed that we have a thing for ice cream pies around here. I mean, what's not to love? Most recently, there was the Chocolate Caramel Hazelnut Ice Cream Pie. Before that. Chocolate Peanut Butter Ice Cream Pie and Chocolate Amaretti Ice Cream Pie.

While those pies take mere minutes to put together, this one is a little more a labor of love. You'll make the crust, you'll make the caramel sauce, you'll make the ganache, you'll spread four layers of ice cream. Is it worth it? YES. You guys! LOOK at that caramel sauce.

You can make this pie with any ice cream. The recipe calls for two pints. or "pint-ish" since pints are not what they used to be. I used coffee as one of the ice cream flavors because it's my husband's favorite, and vanilla for the second. You could use all vanilla or a vanilla/dulce de leche mix. I dare say chocolate would be over the top and fabulous here. Whatever you choose, grab high-quality ice creams.

Turtle anything means pecans. Start by toasting them. You'll use these in the crust and the topping.

The crust comes together in the food processor. Easy peasy.

Next, you'll make the caramel sauce. This is a dark caramel sauce made with dark brown sugar. I don't typically use dark brown sugar, but the richness really shines through when layered with the ice cream. The sauce is just enough for layering and decorating the top, so try to refrain from too much "testing."

For easy spreading of the ice cream, let it sit at room temperature for 5 minutes. Stir until smooth, then spread. I prefer letting it soften at room temperature to using the microwave.

Each layer of ice cream gets topped with some of the caramel sauce. You'll freeze the pie between layers. Like I said, labor of love.

The entire pie is topped with a thick layer of homemade ganache. This is what separates the men from the boys. or this pie from any other ice cream pie. Oh baby.

Pipe the remaining caramel on top and sprinkle with some of the toasted pecans. Because the pie needs a few hours in the freezer to set up, it's a great choice for a make-ahead dessert.

for the crust:

1 pint* coffee ice cream
1 pint vanilla ice cream

*pints aren't quite pints anymore. Use pint-ish containers

for the ganache:
6 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
1 1/2 tablespoons corn syrup (light, not lite)
3/4 teaspoon vanilla
pinch kosher salt

Preheat oven to 350. Pulse 1 cup of the pecans (reserve the remaining and roughly chop) in a food processor until finely chopped. Add the graham cracker crumbs, sugar, and salt, and process until combined. On low speed, drizzle in the melted butter. Press into the bottom and sides of a 9-10" glass pie plate.

Bake for 12 minutes. If crust puffs up, press it down. Let cool, cover with foil, and freeze at least one hour, up to a few days.

Make the caramel. Place the brown sugar, cream, and corn syrup in a medium saucepan. Heat over medium, whisking frequently, until the mixture comes to a boil. Boil for 5 minutes, whisking occasionally. Remove from heat, whisk in the butter, vanilla, and salt. Set aside to cool completely.

When ready to assemble, spoon half of the coffee ice cream into a bowl. Let sit at room temperature for 5 minutes. Stir with a silicone spatula until smooth. Spread over the frozen crust. Drizzle 1/4 cup caramel sauce over the top. Freeze for 20 minutes.

Repeat with the remaining coffee ice cream, then the vanilla - freezing between layers. Do not add caramel to the final layer. Freeze.

Make the ganache. Place the chocolate, cream, and corn syrup in a bowl. Place over a pan of simmering water and stir until melted. Remove from heat and stir in the vanilla and salt. Let cool to room temperature.

Remove the pie from the freezer. Spread ganache over the top. Place in freezer while spooning remaining caramel into a piping bag. Snip the tip and pipe over the ganache. Sprinkle on the remaining pecans. Freeze at least 3 hours before serving.

Remove from freezer for 5-10 minutes before serving. A bench scraper will help with cutting. Serve.

In a microwave safe dish, combine the ice cream topping and the chocolate pieces. Microwave on high for 1 to 1-1/2 minutes, stirring every 30 seconds until melted and smooth. Cool slightly.

Oil the inside of a springform pan. Line the sides of the pan with 2 inch wide strips of parchment paper.

Place cookies in a resealable plastic bag or a food processor and crush into fine crumbs. Stir the melted butter into the crumbs and press firmly onto the bottom of the springform pan. Place in the freezer.

To toast the pecans: Preheat oven to 350 degrees F. Spread the pecans in a single layer on a small baking pan. Bake 10 to 15 minutes, stirring once or twice, until lightly toasted. Cool completely. Reserve 1/2 cup of the pecans for topping. Coarsely chop the remaining pecans and set aside.

Scoop half of the butter pecan ice cream over the crust, pressing into an even layer. Drizzle with one third of the caramel-chocolate sauce and half of the chopped pecans. Scoop half of the chocolate ice cream over the first layer. Drizzle with half of the remaining sauce and sprinkle with the remaining chopped pecans. Scoop the remaining butter pecan ice cream around the outer edge of the pie. Scoop the remaining chocolate ice cream into the center, filling it. Top with the reserved pecan halves and drizzle with the remaining sauce. Wrap loosely with aluminum foil place in the freezer.and freeze until firm, about 4 hours.

Before serving, refrigerate the dessert for 30 minutes. Release the collar from the pan carefully remove the parchment paper. Cut using a sharp knife dipped into warm water. Wipe and dry the knife after cutting each wedge.

Summer is heating up and if your family is anything like mine, you’ll be celebrating birthday’s, holidays and having family parties outside in the heat until October. I cannot deny my love affair for chocolate pie desserts and either can the family. Keeping with the summer spirit, you’ll want to have this frozen shake for holiday parties or to sip on while in the pool.

This shake is insanely easy to make and uses EDWARDS® Whole Pies. You’ll want to take a bite out of it. Can you see the caramel oozing out of the side on the picture above. Throughout the whole pie, caramel is stuffed inside and it’s delicious!

Start by combining chocolate milk and ice cream/custard in blender and blend for a few seconds. Slice 1 cup frozen EDWARDS® Turtle Pie and place it in the blender and blend just a few seconds.

Pour in glass and top with caramel sauce or chocolate sauce. Place in the refrigerator to thicken or until ready to serve.
