Doughnuts

  • 500 gr of flour
  • 120 gr of butter
  • 40 g of yeast
  • 1 teaspoon powdered sugar
  • 1 teaspoon rum
  • 1 teaspoon of salt
  • grated peel of a lemon
  • 5 egg yolks
  • 350 ml of milk

Servings: 20

Preparation time: less than 120 minutes

RECIPE PREPARATION Donuts:

Rub the yeast with the sugar in a bowl until it liquefies, add the soft butter, the yolks one by one, always stirring, the rum, the lemon peel, the salt, the not too cold milk (to be at room temperature), and finally the flour. Knead the dough well on the table for 7-8 minutes, then let it rise for 20 minutes when hot. Spread the dough in a 2 cm thick sheet and cut the slices, with a glass with a thin edge, always passed through the flour so that the dough does not stick to it. Leave the cut slices to rise for another 20 minutes, the dough that gathers between the slices, spreads again and cuts the same. They can be filled with jam just like I did. When they are raised, bake them in 1 liter of oil. When they are lifted to the surface of the oil, it means that they are ripe and taken out in a bowl. They are very delicious.


  • 500 gr of flour (plus 1-2 tablespoons if needed)
  • 150 ml of warm milk
  • 25 gr fresh yeast
  • 100 gr sugar
  • 2 eggs
  • 40 ml oil
  • o esenta de rom
  • 1 tablespoon lemon peel and orange
  • a pinch of salt

Liquefy the yeast with 1 teaspoon of sugar and a little warm milk and put it in the flour. Beat the eggs with the sugar, add the lemon and orange peel, rum, salt powder and warm milk. Pour little by little into the flour and knead adding the oil as in a cake. Leave it to rise for 40-50 minutes in a warm place, away from drafts.

When it has grown, we spread a sheet from which we cut 6-7 cm diameter rounds. Let them grow again for 10-15 minutes and fry them in an oil bath.

Remove from absorbent wipes.

We place them on a plate and sprinkle powdered sugar.

They are delicious, with a strong citrus peel aroma. They can also be filled because a part of the middle is empty, but they are very good and so on. Enjoy!

5. Put the vanilla cream composition back in the pan and leave it over medium heat until it starts to thicken, stirring periodically.
6. Once the vanilla cream is obtained, melt the butter in the composition and add the vanilla, if you use the essence. Cover with cling film and allow to cool.

Preparing donuts with vanilla cream

1. Combine sugar with warm milk and yeast. Allow the mixture to activate for 10-15 minutes (Until you notice the foam on the surface).
2. Separately, combine the flour with the salt, then bring them over the obtained mayonnaise, together with the 2 eggs.
3. Mix until you get a homogeneous dough that you knead by hand for 10 minutes.
4. Incorporate the soft butter, kneading for another 15 minutes, or until you get a fluffy and elastic dough.
5. Increase the vanilla dough with the vanilla until it doubles in volume (at least an hour).
6. After the dough has risen, spread it on the worktop until it reaches 1 cm thick.
7. Cut the donuts with a special shape or with a wide glass and place the donuts on high for at least 30 minutes.
8. Fry the donuts over low-medium heat, 2-3 times maximum, on both sides, until golden brown.
9. Pass the donuts through powdered sugar or fine sugar, then fill the donuts with vanilla cream, using a baking sheet, equipped with a simple tip.

As far as I know, everyone sometimes has a craving for donuts. Many times we refrain from this guilty pleasure, but at least once, twice a year, I say to indulge and indulge in some donuts with fine and reddish crust and fluffy interior. My donut recipe is very simple, I make them among other kitchen chores and I almost don't feel like I worked with dessert.

I must point out that, precisely because of the donut appetite, which is a bit too difficult to control, I usually make a small portion of donuts, made from 250 grams of flour. Honestly, and so too many come out & # 8230 and they all eat!


Simple Gogosi Ingredient:

  • 250 grams of flour
  • 120 ml. warm milk
  • 12 grams of fresh yeast or 3.5 grams of dry yeast (half an envelope)
  • 40 grams of sugar
  • 2 fresh yolks

  • 1 teaspoon vanilla extract
  • 30 grams of melted butter
  • 1 pinch of salt
  • vegetable oil for frying

Prepare Simple Donuts:

1. Rub the yeast well with 1 teaspoon of sugar (of the total amount) and then dissolve it with warm milk. Leave on for about 5-10 minutes.

The flour is mixed in a bowl with grated lemon peel. Beat the yolks with the salt, the rest of the sugar and the vanilla extract. After the yeast forms a consistent foam on the surface, pour it over the yolks, mix quickly and pour it over the flour in the bowl, mixing at first with a wooden spoon, until all the liquids are incorporated.

Gradually add the melted butter, which should not be hot, mix and then knead. Depending on the quality of the flour, you may need 1 extra tablespoon of flour, or conversely, 1 extra tablespoon of milk. A dough with a cake-like consistency must be obtained.

2. Knead the dough until it becomes smooth, completely non-sticky. Form a ball of dough that is greased with a few drops of oil. Grease the bowl a little and cover it with cling film. It is placed in a warm place (I usually put it in the preheated oven at 35 degrees) and is expected to grow until it doubles in volume.

3. Grease the worktop with very little oil and spread the dough, with the rolling pin or just pressing it with your palms, in a sheet about 1 & # 8211 1.5 cm thick. Cut the round donuts with a glass or a metal shape. I used a shape with a diameter of 8 centimeters. Place the donuts on a wooden board or in a tray in which a clean kitchen towel has been placed. Gather the edges, knead very little and spread again on the sheet, cutting other donuts, until the dough is exhausted. Keep in mind which donuts are formed from these edges, they will fry the last ones. Cover the donuts with a damp napkin and leave to rise in a warm place for 20-25 minutes.

4. In a pan with a thick bottom (preferably a cast iron one) pour oil like 3 good fingers. Heat the oil until, if you put the tail of a wooden spoon in the oil, the oil starts to sizzle instantly around it (170 degrees Celsius). At this point, the fire is reduced to medium, because the pan will keep the heat very well. Fry the donuts in several tranches, so that they can float in oil. They will grow a lot during frying. The donuts are constantly monitored, because they burn very easily, especially since the dough is sweet. The donuts turn as soon as they turn golden on one side. When they are brown, take them out, drain them and place them in a tray in which absorbent paper napkins have been placed, to drain the oil well.

5. The donuts are powdered with powdered sugar and are ready for tasting. If desired, they can be filled with creams or jam, I like the most simple.

Inside they are tender and fluffy. One of the few dishes that must be really fluffy :).

  1. Put a third of the lukewarm milk in a large bowl. Crush the yeast inside and let it sit for 5 minutes. In a small bowl, combine the rest of the milk with the sugar and butter. Add to large bowl, stir. Add the egg, mix until smooth.
  2. Gradually add the flour, nutmeg and salt and mix until smooth. If the dough is sticky, add more flour until it is gone.
  3. Knead the dough on a surface powdered with flour for 5 minutes / until the dough is soft, elastic. Form a large bowl out of it, place it in a lightly greased bowl (so it doesn't stick to it), cover with cling film and let it rise until it doubles.
  4. Spread the dough with a rolling pin, do not leave it very thick because in the oven it will double / triple its size.
  5. With a normal glass, cut out the donuts. If you want to make those with a hole, it's simple: with a glass of brandy or a lipstick lid / glass stopper, cut out the center of the donut.
  6. Preheat the oven to high temperature. Put a parchment paper on a tray, put the donuts on it. Cover with a clean towel and leave for 45 minutes.
  7. Put the donuts in the oven for 7-10 minutes (check that they do not burn). Take them out, leave them to cool for 5 minutes and then cover them in the chocolate icing made according to the recipe here or, more simply, sprinkle powdered sugar on top.
