to pick the nuts I need to prepare the delicious jam.

  • 150 green nuts
  • 1 kg of sugar
  • 400 ml water

RECIPE PREPARATION Green walnut jam:

Walnuts should be harvested in early June, when the peel is not fully formed.

If we don't want to get our hands dirty and let everyone know what we did,

we arm ourselves with one or two pairs of thicker plastic gloves.


We will clean the nuts with a knife until we reach the white side with the gelatinous interior.

We will immediately throw them in cold water, so that they do not darken and all the bitterness comes out of them. We will change the water in which the nuts are several times.

We leave them in the water overnight, with a plate over them to keep them in the water, not to rise to the surface.


The next day we put the water on the fire and the sugar to boil until it thickens

well and the syrup is formed.

In the syrup we will put the nuts, well drained of water, and the lemon juice.

Let it boil until it binds well, but be careful not to boil it

The preparation of the green walnut jam is long, but the result is worth the effort! You can't find such a natural vitamin complex anywhere! The jam has an amber color, an aroma and a great taste! A tasty dessert to everyone's liking!

INGREDIENT:

& # 8211 juice from 1 lemon + 1 citric acid powder

For 1l of water:

METHOD OF PREPARATION:

1. Lime water is necessary for the fruit to look beautiful and keep its shape during cooking. Lime has no negative effect on nuts and is harmless to humans.

2. Before picking the nuts, you need to check them: stick a toothpick - it should easily pierce the nut.

3. Peel the walnuts, using the vegetable peeler. Don't forget to wear gloves.

4. Pour enough cold water to completely cover the nuts. After a while, drain them and tune in other water. In the evening, change the water again.

5. Leave them until the next day, then change the water again. Repeat the procedure 3 times a day for 7-8 days.

6. Dissolve the lime, taking into account the proportions, and leave the solution to infuse for 8 hours. We used 4l of water and 8 tablespoons of lime. First check how much water you need for your nuts to be completely covered in liquid.

7. Pour the lime water over the nuts, straining it through a few layers of gauze.

8. Leave the walnuts for 12 hours, stirring regularly.

9. Then wash the walnuts and leave them for 1 hour under running water to wash well.

10. Dissolve 1 teaspoon of alum in 4l of water and put the solution on the fire. Heat the liquid, add the walnuts and simmer for 20 minutes, after boiling, to neutralize the lime.

Advice. You can prepare jam without alum.

11. Drain the nuts and wash them under running water.

12. Pierce each walnut with a wooden skewer on all sides.

13. Leave the nuts for 1 hour under running water.

14. Transfer the sugar to a bowl, pour water (take into account the proportions according to your amount of nuts), put the syrup on the fire and bring it to the boil. Remove the foam.

15. Add the walnuts, boil for 15 minutes and let the jam cool for 12 hours.

16. Boil the jam a second time for 15 minutes and let it cool for 12 hours. Remove the foam.

17. Boil the jam for the third time for 15 minutes and let it cool for 12 hours.

18. Boil the jam for the fourth time, the last time, for 10 minutes, add the spices, the mixture of lemon juice and citric acid and boil it for another 10 minutes.

19. While the jam is hot, remove the spices and pour the jam into sterilized jars beforehand.

Peeled green walnuts will be removed from the cold water with a spatula with holes (to drain the water), then added to the bound syrup, letting it boil until the water is removed from the nuts.

During boiling, add lemon juice and pieces of peel, to keep a yellow color, like bee honey.

The green walnut jam will be put hot in previously sterilized jars, then stapled and put in a warm bed in a blanket, left until the jars have cooled completely (1-2 days each).
