Crab- and Potato-Crusted Wahoo with Creamed Spinach and Bacon

A combination of mashed potatoes, crabmeat, and basil give the wahoo in this recipe the perfect crust. It's crunchy texture is perfectly paired with creamed spinach and bacon to make it an overall appetizing dish with a nice balance of flavors and textures.

Ingredients

  • 1/2 Cup warm mashed potatoes
  • 1/2 Cup fresh lump crabmeat, picked over for shells
  • 1 Tablespoon julienned fresh basil
  • Four 7-ounce wahoo, or ono, fillets
  • 1 Tablespoon canola oil
  • 3 slices bacon
  • 1 Teaspoon minced shallot
  • 1 Teaspoon minced garlic
  • 12 Ounces spinach, washed and steamed
  • 1 Cup heavy cream
  • 4 carrots, thinly sliced, and blanched
  • Fresh whole basil leaves, for garnish

Potato Crusted Crab Cake

1/2 c. sweet red pepper, finely chopped

1/2 c. sweet onion, finely chopped

2 Tbsp. fresh flat leaf parsley, chopped

1 c. lightly packed soft bread crumbs

1 Tbsp. Worcestershire sauce

1 c. instant potato flakes

1 lemon, cut into quarters

Melt butter in skillet over medium high heat. Add pepper and onion. Saute 2 minutes until tender.
Combine cooked vegetables, crab meat, bread crumbs, Miracle Whip, egg, Worcestershire sauce, hot sauce, salt and pepper in large bowl.

Form into 4 crab cakes. Coat with potato flakes.

Pour oil in skillet over medium high heat and cook 2 minutes each side until heated through and lightly browned. Garnish with lemon.

Ingredients Needed

  • Parmesan Cheese: I&rsquom using the fresh variety that you can pick up in the refrigerated cheese section of the market. The grated kind looks just like the kind that you can pick up for Italian dishes. I get it fresh since it has a milder flavor and is less processed and salty.
  • Salt: You can add additional salt if you want to, but the parmesan cheese adds some salty flavor naturally. I&rsquod only add salt to this recipe at the very end after tasting it.
  • Spinach: Fresh spinach is a bit easier to work with because you don&rsquot need to thaw and remove the extra liquid first. If you opt for frozen spinach, be sure to thaw it first and remove as much moisture as possible. You&rsquoll also want to just heat it through in the sauce since it will come already wilted.

    Crab- and Potato-Crusted Wahoo with Creamed Spinach and Bacon - Recipes

    The wahoo as food has a very delicious and tempting flavor. The flesh is sometimes gray or white and this fish can be prepared and eaten in fish recipes grilled, poached, or baked. Since the flesh is firm, it may be firm to hold shape and be used for hearty and healthy food dishes like soup, stew or pasta.

    For easier choices, this fish does great with pan seared and baked fish recipes, even for beginners, and fast enough that it does not take much time to prepare. Dishes like these may be served by a novice cook in a potluck party or get-together if the choice to make is something healthy as opposed to ordering pizza.

    Wahoo, aside from being baked may also be grilled with some seasoning or may be poured on with tomato sauce for an added zing, taste, and nutrition value. The recipe below is a fantastic way to grill wahoo.

    3 tablespoons butter, melted

    2 tablespoons fresh lime juice

    ½ tablespoon smoked paprika (Pimentón)

    ¼ teaspoon freshly ground black pepper

    In small bowl, combine butter, lime juice, zest, smoked paprika, salt and pepper.

    Place fish in baking dish. Cover both sides with marinade. Cover and refrigerate 20 minutes.

    Place fish in well-oiled hinged wire grill. Cook about 4 inches from heat until done on one side, about 4 to 5 minutes. Turn and repeat on other side.
