My dear ones, ready with Easter, ready with many and slightly heavier foods, it's time to come back; that's why I recommend something a little easier, healthier. I have the recipe for these skewers from my daughter, being special especially for used sticks, rosemary sticks.

  • 1 chicken breast
  • 1 red onion
  • 1 red fat pepper
  • 1-2 roses
  • rosemary sticks
  • juice of 1/2 lemon
  • 2 tablespoons olive oil
  • salt, pepper, thyme, paprika

RECIPE PREPARATION Skewers with chicken and vegetables:

Chest, boneless, skinless, washed, dried, diced, put in a bowl, add salt, pepper, thyme, paprika (everything to taste), lemon juice, olive oil, mix to enter the flavors in the meat and leave for 30 minutes. The vegetables are cleaned, washed, cut into larger pieces, then I form the skewers interspersing the meat with vegetables on sticks; in the well-heated Teflon grill, put the skewers, keep for 4-5 minutes turning them and serve hot.

Chicken skewers with vegetables - simple and tasty!

Ingredients for chicken skewers (4 skewers):

  • 400 g skinless chicken breast
  • 1 small yellow bell pepper
  • 1 small green bell pepper
  • 2 small zucchini zucchini
  • 6-7 pineapple slices
  • 3 tablespoons olive oil
  • 1 small lemon (juice only)
  • salt
  • freshly ground pepper

Spicy sauce with balsamic vinegar:

  • 200 ml canned pineapple juice
  • 8 g cornstarch
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons spicy ketchup
  • salt
  • freshly ground pepper

Method of preparation:

  • Put the starch in a saucepan and add 2-3 tablespoons of pineapple juice. Stir until the starch is perfectly dissolved, then add the remaining juice, balsamic vinegar, spicy ketchup, salt and pepper to taste.
  • Mix well and put the pan on very low heat. Boil the sauce for about 5-10 minutes or until it thickens enough.
  • Turn off the heat, cover the pan with a lid and let the sauce cool.

Chicken skewers with vegetables, preparation:

  • Cut the chicken breast into suitable cubes. Wash the peppers, wipe them, clean them and cut them into cubes of the same size as the chicken breast cubes.
  • Drain the pineapple slices and cut them into four.
  • We wash the pumpkins, we do not peel them, we wipe them well and we cut them, in length, into very thin slices.
  • Form the skewers, alternating the chicken breast pieces with the pepper pieces, the pumpkin slices and the pineapple.
  • Mix the lemon juice with the olive oil, salt and pepper to taste, and grease the chicken skewers on all sides.
  • Fry them on the hot grill, 5-6 minutes on each side, over medium heat. During frying, grease them with the emulsion of lemon juice and remaining olive oil.
  • We taste them with gusto, along with the spicy sauce and a salad of tomatoes or seasonal vegetables.

Culinary tricks:

If you want the mashed potatoes to come out fluffier, add a teaspoon of vinegar.

In order for the cooked vegetables to retain their color, take them out of the water in which they were boiled and place them in a bowl with cold water or ice cubes.

Put a spoonful of yogurt in the composition of the glazes, so that it does not crack when it cools down.

Marinating is a method that not only helps to soften the meat, but also gives it flavor by using and combining sauces, vegetables and spices.

It will reveal a very successful marinade recipe that I use quite often.

You can also use it for turkey, duck, goose.

QUINTESSENCE:

  • boneless skinless chicken breast - 1 kg
  • onion - 1 large piece
  • sunflower oil - 200 ml
  • lemon juice - 4 tbsp
  • saffron - 0.5 g
  • white pepper - 1 teaspoon tip (use white pepper so that the color of the chicken does not change)
  • salt - to taste (about ½ teaspoon, depending on the salt used)

ALCHEMY:

For starters, wash the chicken breast. We cut the chest into cubes of about 1.5 cm.

We clean the onion and cut it into juliennes.

We grind the saffron pistol with a mortar. Dissolve it in 2-3 tablespoons of hot water in a container with a lid and leave it to infuse for 2-3 minutes.

In a bowl or container with a lid, add the chicken cubes, julienned onion, oil, lemon juice, dissolved saffron, white pepper and salt.

We put the lid on or wrap it with freshness foil and put it in the fridge for at least 12 hours. It would be preferable to marinate for 24 hours for a more aromatic and intense taste.

If we use wooden skewer sticks, we keep them in cold water for about 30 minutes before using them, so that we are not surprised to burn at the ends when we put them on the grill.

We can pull only the chicken cubes on the skewer sticks or we can also use diced onions of about 1.5 cm and red, green or yellow bell peppers. We must be careful that when we pull the meat or vegetables on skewer sticks, there are meat and vegetables of the same size on the stick, so that we are not surprised that some are made and others remain undone.

Chicken skewers prepared in this way can be served with rice garnish, baked potatoes and baked vegetables, grilled or sauteed.

We can also use this marinade for wings, chops, chicken breast, turkey or duck.


  • 600 g chicken breast
  • 1 medium eggplant
  • 2 new red onions
  • 1 red pepper
  • 3-4 tomatoes
  • 10-12 mushroom mushrooms
  • 2 zucchini
  • 2-3 hot green peppers

  • 150 ml skim milk

  • If we make them on the grill in the yard, we soak the sticks in cold water for 30 minutes. In this way, we protect them from the strong heat emitted by coal or wood. If we make them in the kitchen, we skip this step.
  • Cut the chicken breast into suitable pieces that we put in a ceramic bowl. We cover them, entirely, with milk and put them in the fridge for 1 hour.
  • After 1 hour, drain and move to a separate bowl. In the same bowl add the vegetables cut into pieces of the same size as the chicken pieces. Season them with dehydrated garlic, paprika, salt and pepper and mix well. Cover the bowl with cling film and put it in the fridge for another 1 hour.
  • Form the skewers, alternating the chicken pieces with the vegetable ones. Grease the chicken skewers with a little olive oil.
  • We fry them on the hot grill very very well, 3-4 minutes on each side, or until the meat is completely penetrated.
  • Serve the hot chicken skewers. They are very good!
