Preparation for Tosca cake:

Rock 1: Beat the 6 egg whites together with the sugar. We continue adding 50g poppy seeds and 50 g coconut. Stir further and add 3 tablespoons of flour and 1 baking powder. After homogenization, put it in the oven in a large tray.

Cream: rub the yolks with the sugar and vanilla sugar until they become foam. The pudding powder is dissolved in cold milk, then mixed with the yolk foam and boiled everything in a bain marie, until it thickens (it can be boiled over low heat). When it has cooled, put the butter rubbed in the foam.

Wheat 2: We syrup the biscuits in the coffee a little, then we line them nicely over the layer of cream.

Glaze: Melt the chocolate together with the butter and milk. Bring the composition to the boil and then mix. Leave to cool. When it has reached the consistency of a thicker cream, pour it over the cookie sheet.


Coarse cake refrigerate for a few hours, then portion.

On New Year's Eve, just the cake as a sweet dish was enough for us. I take the opportunity to cook cakes on other occasions, when I have to give a gift to someone close, or when I go on a visit, as it was the other day, & # 8230 I find a reason to make cakes. You can double the amount if you need more than 12 pieces of 6 & # 2156 cm (about the size of a confectionery cake).

4 large (or 5 small) egg whites
a pinch of salt
120g old
3 tablespoons flour (today I used & # 8220Mix It & # 8221-Dr. Schar / Gluten Free Products)
50 g mac
40g coconut flakes
a teaspoon of baking powder
1 tablespoon lemon juice
vanilla
CREAM
4 yolks (I put 5 small ones)
100g sugar (for white chocolate icing) or 130 pt (for dark chocolate icing)
150 ml whole milk
1 tablespoon starch (I used & # 8220Mix Pattiserie & # 8221 & # 8211 Dr. Schar / Gluten Free Products)
1.5 tablespoons flour (I used & # 8220Mix Pattiserie & # 8221 & # 8211 Dr. Schar / Gluten Free Products)
50 g butter
100 ml whipped cream
2 sachets of vanilla sugar

GLAZE
100 gr milk / bitter chocolate (in case 2 of this design proposed by me, you need about 200 g white or black)
25 ml liquid cream (I put 1 tablespoon of 200g of chocolate)
50 gr butter

& # 8220BLAT & # 8221 SUPERIOR
1 pack of rectangular Petite Beure biscuits (I used round & # 8220Digestive & # 8221 biscuits from Dr. Schar / Gluten-free products)
75 ml prepared and unsweetened coffee

PREPARATION
COUNTER TOP
Remove the butter from the fridge in time, so that it is not hard.
Spread baking paper in the tray.
Preheat the oven to 180 degrees.
1. Mix the egg whites with a pinch of salt.
2. Gradually add the sugar, stirring constantly until completely diluted.
3. Add the lemon juice, mix a little.
4. Mix dry: flour + baking powder (optional) + poppy seeds + coconut. Leave the mixer and mix them in the meringue with the pear, with movements from bottom to top, easily.
5. Pour everything into the prepared tray, level (with the wide cake slicer goes fast) and put the tray in the preheated oven at 180 degrees.
6. Bake on low heat until the top takes on a golden hue. For me it lasted about 40-45 minutes, it is taller than you would double in a standard stove tray, in which case it will come out a little thinner.
After baking, remove it with paper on a grill to cool to room temperature.

CREAM
1. Put the yolks together with the sugar in a double-bottomed bowl and beat well.
2. Add the flour and starch, then gradually stir in the cold milk so that it does not form lumps.
3. Put the pot on the fire (on a protective plate if the pot does not have a double bottom) and simmer, stirring constantly, until the composition acquires the consistency of a pudding. Stone protection vessels are the best.
4. Cool the mixture (I put the bowl with the bottom in a bowl of cold water and put it in the fridge).
5. After cooling, add the butter that you have previously beaten to a froth. In small quantities it is useless. Put directly.
6. Mix the whipped cream and incorporate it, stirring lightly in the cream, together with the vanilla sugar.
7. Spread the cream over the cold counter and level it, in case you don't decorate them in pieces, as I did now. I put the cream in the silicone bag.

8. Pass the biscuits through the hot coffee, quickly, so that they do not soften too much and break, and place them over the cream. If you keep it longer, it will soak too badly and break.

9. Prepare the icing by putting all the ingredients in a kettle and melting them over low heat (in a bain-marie).
10. Pour the icing over the biscuits, level if you don't decorate like me individually each piece cut from the counter and let the cake cool for a few hours.

Portion it with a serrated knife if you make a whole carpet, and in my version like this:
& # 8211 I cut 12 square pieces countertop
& # 8211 with a silicone bag / thick bag cut at 1 corner 1 cm I applied the cream in a double layer until I consumed it
& # 8211 I placed a soaked biscuit and drained coffee

8 yolks + 8 tablespoons of sugar rub well. Add 300 ml of milk and an envelope of vanilla pudding.

Boil the composition on a steam bath until it thickens like a mayonnaise. Let it cool well and then gradually add 300 grams of margarine or butter, mixing well.

The cream is spread evenly over the counter.

On top of the cream we place cocoa biscuits next to each other (I made a pandispan top from 4 eggs because I don't like to use biscuits instead of a countertop).

Pour melted chocolate over the biscuits in which I added 2 tablespoons of oil.

Leave the Tosca cake to cool overnight and cut with a slightly heated knife. I cut it after 2 hours and that's why the cream appears a little softer in the picture. I assure you that the concrete hardens overnight.

Tosca cake & # 8211 a new recipe, adapted to my taste

I recently celebrated my birthday and prepared a new version of the Tosca cake. I adapted the recipe to my taste. All the guests at the party gladly served this delicious dessert.

Ingredients for poppy top and coconut flakes:

  • 7 egg whites, a pinch of salt
  • 7 tablespoons sugar, 100 g wheat flour
  • 100 gr poppy seeds, 100 gr coconut flakes
  • 1 teaspoon baking powder, a knife tip baking soda

Ingredients for the simple countertop:

  • 4 eggs, 4 tablespoons sugar
  • 4 tablespoons wheat flour
  • 1 teaspoon baking powder
  • A knife tip of baking soda

Cream ingredients:

  • 800 ml milk, 9 tablespoons semolina
  • 7 egg yolks
  • 100 g sugar, 1 sachet of vanilla sugar
  • 200 g butter, 2 tablespoons cherry liqueur
  • 200 gr white chocolate
  • 50 gr dark chocolate
  • 6 tablespoons apricot jam
  • 200 gr simple biscuits

Method of preparation:

We prepare the coconut and poppy seed. Using the mixer, beat the egg whites with a pinch of salt until you get a hard foam, then add the sugar, spoon by spoon and continue to mix.

Mix wheat flour with baking powder and baking soda and add it to the egg white bowl. Mix lightly with a wooden spoon or spatula. Then add the poppy seeds and coconut flakes.Pour the dough obtained in a tray lined with baking paper and bake for 10 minutes in a preheated oven at 180 degrees. Let it cool.

We prepare the simple countertop. Beat eggs with sugar until light in color. Add flour mixed with baking powder and baking soda.Pour the dough into the same tray in which I baked the first top. Bake the dough for 10 minutes at a temperature of 180 degrees. Let the countertop cool.

We prepare cream. Mix the egg yolks with the sugar.Boil the semolina in milk. Add the yolks and cook a thick pudding. We take the pot from the stove and put it in cold water, to cool quickly.

Beat the butter with the vanilla sugar until fluffy. Add the pudding, spoon by spoon, in the beaten butter. At the end, add the cherry liqueur and mix well.

Put a little cream aside for decoration. Divide the remaining cream into two equal parts.Place the coconut and poppy top on a tray. Grease it with apricot jam. Spread half of the cream over the counter greased with jam.Over the cream, put a layer of simple biscuits. Grease the biscuits with jam and cover them with a layer of cream.

Put the cake in the fridge for 3 hours, during which time the cream will solidify. Then cover the second layer of cream with the remaining top. Put the cake in the fridge overnight.The next day, we prepare the chocolate icing. Melt the two types of bain-marie chocolate. Pour the icing obtained over the cake. Put the cake in the fridge again for a few hours, during which time the icing will harden.Then take the cake out of the fridge and cut it into slices. Add 1 tablespoon of poppy seeds in the cream that I put aside. Put the cream in a pastry dish and decorate the cake. Have fun with your loved ones and increase your cooking!

I discovered it looking for a recipe for cake top and since then all the time I want to try something new I am inspired by you. yesterday, on my son's name day, I made the cake and, although it was fff good, I had a small problem in the sense that the cream didn't come out very well. everything was fine until I mixed it with margarine. I had a packet of margarine joining I think of 250g and I filled up to 300g with butter. instead of coming out loud that in your picture it came out quite soft and with some particles through it as if the margarine had not dissolved well. nor did the refrigerator harden until the next day. where did i go wrong because I also put butter and margarine, or was it not good margarine? or did the margarine foam have to be beaten separately and then mixed with the rest?

Dear Anonymous, thank you for your appreciation and happy birthday to the boy for his birthday :). Let's see what happened to the cream & # 8230 margarine is added little by little in the egg cream, mixing well with the mixer. Did you put them together and mix them? If you did, that might be the explanation. I rarely make creams and then I use butter and not margarine but my colleagues use Rama margarine and they told me that it behaves ok. It could also be margarine, to know that now the Union (actually you may have seen) has become quite expensive, but I suffered it and the butter was of poor quality, so now I use the one from Dorna with 82% fat (250 g costs about 4.5 lei).
