Sweet cups of fruit

Depending on the combination of fruits and their sweetness, we use or not bee honey.

RECIPE PREPARATION Sweet fruit cups:

We take a sharp knife with a sharp point and cut the melon in half, in a serrated shape (to give it a more pleasant appearance). Using a toothpick (or a teaspoon, in its absence) remove the whole melon core, in round shapes and put it in a bowl. Wash the rest of the fruit and cut them into slices, squares or as each wants. We squeeze the two grapefruits, the juice will be consumed separately, as such, and we will use the cups.

We fill the 6 cups with the pieces of fruit, on top we put a teaspoon of honey (optional) and for decoration it remains to everyone's imagination.

I used a sprig of fresh mint and a few slices of dark and white chocolate on a small grater.

Tray pie stuffed with berries

Prepared according to a traditional Romanian recipe, the Linco Patisero berry pie is a wonderful choice for a tasty dessert.

Ingredient: Dough (60%): white flour of wheat (EU origin), water, refined sunflower vegetable oil, corn starch, iodized salt. Filling (40%): berries (red currants, blackcurrants, blackberries, raspberries in various proportions) & # 8211 origin EU & # 8211 45%, apples, sugar, corn starch, semolina wheat, aroma.
Made in Romania.

PREPARATION INSTRUCTIONS:

1. Preheat the oven to 190 ° C (medium heat).
2. Remove the pie from the freezer and remove the outer packaging (cardboard box and clear foil).
3. Place the frozen pie in the oven with the tray.
4. Bake until browned, 40-50 min, depending on the efficiency of the oven.
5. For a crispy, golden pie, 10 minutes before it is ready, grease the pie with 20-30 ml of milk and a beaten egg yolk.
6. After baking, place a damp towel on the pie and leave to cool for about 20 minutes.


Cups of oats with yogurt and berries / SIMPLE RECIPES

Ingredient:

  • 1 1/2 cups oatmeal
  • 1/4 cup chopped walnuts
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons honey
  • 2 tablespoons almond butter / peanut butter
  • 1 egg white
  • 2 simple cups & # 8211 Greek yogurt 2%
  • 2 cups fresh blueberries (or other berries)
  • lemon peel (optional)
  • oil for greased form

Method of preparation:

Preheat oven to 325 ° F.

Mix the oats, nuts, cinnamon and salt in a large bowl.

In a smaller bowl, mix the almond butter / peanut butter with the honey and place in the microwave for 20-30 seconds, then mix the contents well.

Put the egg white in the oat mixture and mix well. Divide the oat mixture evenly into 8 muffin tins, after greasing the forms well with a little oil or cooking spray.

Using a piece of baking paper (to prevent sticking), fold the oat mixture into the bottom and top of each muffin cup. Bake at 160 ° C for 15 minutes or until edges are browned then allow to cool completely into molds.

Use a spatula or knife carefully to dislodge the cups from the molds. Fill each cup with about 1/4 cup of yogurt, and top with about 1/4 cup of strawberries. Sprinkle with grated lemon, if desired.

Put all the ingredients for the cups in a bowl and mix until smooth.

Grease 10 muffin tins with a little butter or line them with baking paper.

Distribute the prepared composition in each form and press in the middle of them, using a spoon, so as to obtain a shape similar to that of a basket.

Preheat the oven to 175 ° C and bake the oatmeal cups for about 15-20 minutes.

Remove from the oven and allow to cool completely so that they are firm enough to be removed from the mold.

Mix the mascarpone with the maple syrup and a pinch of grated Tonka. Fill each cup of oatmeal with a tablespoon of mascarpone and garnish with berries.


How to make creamy or creamy by the glass & # 8211 simple dessert recipe with vanilla cream in a cup?

How to make vanilla cream for creaming, creaming or creampie?

I started with the preparation of the vanilla cream because it needs a cooling time before mounting this cream or cream in the glass or cup. This vanilla cream with beaten egg whites is recorded in Larousse Gastronomique as "Chiboust cream". Basic recipe for vanilla cream for pastry (patissiere, pasticcera) you can find it explained in detail here.

I separated the yolks from the egg whites and put them in a bowl. I put 50 g of sugar, a little salt over the yolks and mixed them well with the mixer. If the mixture is too thick it can be diluted with 50 ml of cold milk. I also added the 35 g of starch or 70 g of flour and continued mixing.

In a large pot I put the rest of the milk (the remaining 450 ml) and the vanilla bean. If you use vanilla extract or vanilla bourbon sugar then put them at the end. I put the pot of milk and vanilla on medium heat and waited for it to boil.

I put out the fire and strained the milk. I diluted the mixture of eggs, sugar and starch with this strained (hot) milk and mixed well. I poured the diluted mixture back into the pot and put it back on medium heat. I stirred constantly (be careful not to get caught!) Until it comes to a boil again. I hydrated the gelatin in cold water (granules or sheets).

After the vanilla cream boiled 2-3 times, I pulled the pot off the heat. The cream is thick and homogeneous, without lumps. If we use starch it boils instantly. If we use flour then we will have to boil the cream for a few minutes for it to cook. It is best to taste it and if you feel the flour then it is clear that you will have to boil the cream. Don't forget to stir constantly in it and the fire should be small / medium!

I quickly started beating the egg whites. When it had set, I put the 50 g of sugar and continued beating until I got a thick and shiny foam. If you haven't used a vanilla stick then now is the time to put the vanilla sugar or extract in the foam or in the slightly cooled vanilla cream.

I gradually incorporated the foam (2 tablespoons at a time) immediately into the hot cream and mixed it lightly with the spatula, from top to bottom. The egg whites are cooked at 75 C and my cream is over 85 C, so rest assured that they will not stay raw. If you have white spots (egg whites) left in the cream, you can mix it briefly with the mixer - only 10-15 seconds - so that the air in the foam is not lost. I immediately incorporated well-hydrated gelatin into it. I mixed well to melt evenly in the hot cream (max. 60 C). You do not need to melt the gelatin separately in this case.

I let the cream cool for about 15-20 minutes (on the kitchen table). I get about 850 g of vanilla cream but the volume is over 1 L because the egg whites make it frothy, aerated.

How to bake puff pastry dough for cream or cream in a glass or cup?

This Cremșnit or Cremeș la pahar is made with puff pastry with butter (also called French dough). I leave you here the recipe for homemade puff pastry. If you do not have time for such a thing then you can use a puff pastry from the market. I recommend the one with butter (not margarine) from Kaufland, from the fridge (not frozen).

However, for this recipe I used very little puff pastry, approx. 150-200 g. In fact, I made use of the dough edges left from cutting the sheet for the Creamy Cake. If you do not plan the cake then use 1/2 sheet of puff pastry. It is very important that the raw puff pastry stays in the refrigerator until the time of use. The cold makes them feel good.

Basically I cut the puff pastry sheet with biscuit shapes (it can be popcorn, stars, hearts, etc.) which I put in the tray lined with baking paper and put them in the preheated oven at 200 C for 12 minutes (heat up + down + ventilation) respectively the high stage to those with gas. It is very important that the dough is cold and the oven is well heated! After approx. For 12 minutes, the puff pastry pieces looked like this: grown and nicely browned. The puff pastry is tasty when well baked, golden and crispy. Insufficiently baked puff pastry is rubbery, "lumpy" and unpleasant.

The leftover dough from the cut flowers I baked similarly & # 8211 doesn't matter what it looks like because they will be crushed. After cooling, I crushed them by hand in a bowl.


Blueberry mousse

Fruit froths are a light and good dessert that is prepared quickly. In my opinion, the best is the strawberry one, closely followed by the raspberry one. In the past, they were made from beaten egg whites with a little sugar, to which crushed fruits were added, but now I have changed the recipe for the better and replaced egg foam with whipped cream and added an ingredient that is always popular with desserts and more. , greek yogurt :)

Blueberry mousse is the ideal dessert on hot summer days because it is a little sour and invigorating due to the yogurt in the component. And let me write you another secret: you can use it as a cream in a Pavlova, I am convinced that it will be a resounding success!

Blueberry mousse

  • 250ml whipped cream
  • a little greek yogurt (120g)
  • 2 tablespoons powdered sugar (here you can juggle the quantities and put more if you want it to be sweeter)
  • 200g blueberries
  • a little vanilla

Mix whipped cream with powdered sugar and vanilla essence until it turns into whipped cream 90%.

Add the Greek yogurt and mix lightly with a spatula.

Crush the blueberries well and add them to the cream and yogurt composition. You can mix until smooth or mix a little for a more interesting look.

Put the foam in cups and decorate with fresh fruits and flakes or pieces of chocolate.

Recommendation :) If you put it in a casserole in the freezer you will get a delicious ice cream!

Preparation: Put the juice in a saucepan, add the contents of the Dr. Oetker Vege-Gel sachet and mix thoroughly until dissolved. Heat over medium heat until it starts to boil. Pour immediately into molds (cups, glasses), add fruit and allow to cool to room temperature for 1-2 hours. For a quick coagulation, keep in the fridge for an hour.

You can prepare a double amount of lit a liter of juice and 2 sachets of Vege ‑ Dr. Oetker Gel.
