Having leftover Halloween candy is a really good problem to have. One of the perks of being a parent is getting to loot your kid’s Halloween candy after a night of trick-or-treating. We have a rule at our house that they can go crazy on Halloween night. The next day they are allowed to keep one or two pieces of candy and then I confiscate the rest. I pull out the things that I can use for baking and get the rest out of the house (i.e. I send it work with my husband).

Mini candy bars are great to have around to uplevel simple recipes. Add chopped candy bars (Snicker’s is my favorite, but Milky Way, Heath, Twix, Reese’s, Baby Ruth all good) to brownies, in place of chips in your favorite cookie recipe, or add some to a frosted cupcake. You can’t really go wrong, it all works.

1. Snicker’s Cheesecake Brownies – I made these decadent Snicker’s Cheesecake Brownies for Peapod, and they were gobbled up as soon as I was done taking their beauty shot. Theses brownies are not super sweet and the cheesecake adds just enough tang to balance the sweet Snicker’s pieces. I like the crunch that the peanuts from the Snicker’s add to these brownies. These hit all of the high notes – sweet, salty, crunchy, and chocolate.

2. Snickers Cookie Bars – These are so easy your kids can make these on their own. These bars are sweet and salty (my favorite) and have just enough crunch from the peanuts. This recipe is a keeper.

3. Heath Bar Cookies – These cookies are divine, but the key is that you have to let them cool completely before you eat them. I know how tempting it is to eat one straight out of the oven but resist the urge. The Heath pieces need to cool and harden again, until they do they just aren’t great. But when they are cool, they are nothing short of amazing.

4. Oatmeal Peanut Butter Jar Cookies – Are you recycling a gift if you use leftover Reese’s to make a cookie jar? I’m going to go with no on this one. You can make a few of these jars using different candy bars. Snicker’s would be great or Milky Ways.

5. Reese’s Cheesecake Bars – Creamy, salty, tart, peanut butter-y goodness. These are incredible. I love these to bring to a party because you have to make them ahead of time. They need to set up in the fridge to get the perfect, velvety texture that you are after.

Ingredients:
1/4 cup crumbled Butterfinger candy bar, divided
2 cups heavy whipping cream
10 tablespoons granulated sugar, divided
1/8 teaspoon salt
4 large egg yolks
1 teaspoon pure vanilla extract

Directions:
1. Preheat oven to 300 degrees F. Sprinkle 1 tablespoon of crushed Butterfinger into each of four (6-ounce) custard cups.

2. In a large pot over medium heat, combine cream, 7 tablespoons sugar and salt in a pot and cook, stirring, for 5 to 6 minutes or until sugar dissolves.

3. Beat egg yolks in a large bowl and slowly whisk cream mixture into eggs. Stir in vanilla and pour mixture though a fine strainer into custard cups.

4. Arrange cups in a square baking pan and fill pan half way with hot water. Loosely cover with foil. Bake for 1 hour and 30 minutes or until a toothpick comes out clean.

5. Move pan to a wire rack to cool. Refrigerate overnight. Remove pan from refrigerator and top desserts with remaining sugar.

6. Place custard cups under the broiler until melted and caramelized, then chill until top hardens.

Leftover Halloween candy? Here are some ideas for those sweet treats

If you’ve got a few bags of Halloween candy lying around, surprise your sweet tooth with these easy recipes, instead of gorging on candy alone. Buzz60's Sean Dowling has more.

What’s not to love about Halloween? It’s the one night a year when us grown-ups can play dress up, watch scary movies and eat lots of candy.

On Nov. 1, however, we find ourselves with more Halloween candy than we know what to do with — whether our own little trick-or-treaters hit the jackpot or, as the case with many Memphians this year, the normal number of little ghosts and goblins didn’t come because of the rain.

So, what to do with all this leftover candy?

Cookbook author and personal chef Andrea LeTard of Memphis has some great ideas.

A huge fan of Halloween, LeTard is the owner of Andrea’s Cooktales — a personal chef and catering company. She’s also the author of a blog of the same name and a cookbook that was published in the spring.

“Halloween is my absolute favorite holiday," LeTard said. "There's something so playful and fun about it, and when Nov. 1 rolls around, I just don't quite like it to end so I keep it going by continuing the constant pumpkin recipes. One of my favorite things to do is to use leftover Halloween candy to make fun treats.”

Her go-to Halloween candy recipe is one that couldn’t be any simpler.

“My Everything Candy Bar Milkshake recipe is a go-to for the week after Halloween. We get lots of trick-or-treaters, but I always hold back a few candy bars to make milkshakes the following week,” she said.

“To make it, simply chop up about 2 cups of various leftover candy bars — the more of a mixture, the better the milkshake. Place the candy in a blender with a quart of ice cream and 1 to 1½ cups of milk and just blend it all up together," she said.

Not into milkshakes? No worries.

“There are so many recipes you can sneak leftover Halloween candy into — also try it as a cake topping, inside a chocolate pie, or let your kids decorate a fresh batch of brownies with it," LeTard said. "There's no need for any candy to go to waste.”

She also recommended chopping up the candies and using them in place of chocolate chips in your favorite cookie recipe.

Jumping ahead on the holiday calendar, save some candy to decorate gingerbread houses at Christmas. Twizzlers, M&M’s and Skittles all make great decor on a gingerbread house.

If you just need the candy out of the house, don’t throw it away. Consider donating it.

Organizations like Mid-South Food Bank and area soup kitchens would welcome your wrapped, unopened sweet treats.

“Our goal is healthy food, but we always say, ‘Everyone deserves a treat,’” said Marcia Wells, director of community engagement at Mid-South Food Bank.
