    Strawberry Basil Smash – Smashed by Noon

    We’re going to wrap up this week’s series of quarantine whiskey smashes with a fabulous flavor combination topped with sparkling wine – the Strawberry Basil Smash. That’s right, it’s an excuse to open up a bottle of bubbly and top a perfectly excellent cocktail with a bit of bubbles.

    I’ve been wanting to use basil all week, even though it’s not technically in season, because I love the combination of strawberries and basil. There’s something about the sweet tartness of strawberries that blends so beautifully with the delicate herbaceousness of basil. Mint is a wonderful substitution here, but more savory herbs you may have to experiment with. Because we’re adding smidge of champagne to the top of the cocktail, you’ll need an herb that doesn’t fight the aroma of the sparkling wine float on the top.

    I’ll admit the sparkling wine doesn’t show up great in the pictures as it stopped bubbling quickly after I poured it, but it lends a slightly sweet and sour but bubbly mouthfeel to the cocktail, elevating it into a perfect brunch tipple.

    Now, if you don’t have the champagne or sparkling wine, this cocktail still seems far too easy to drink and you don’t have to make enough cocktails to finish out the whole bottle. Which might be hard if there’s only an adult or two in the house. Or, you can use the extra champagne to make champagne simple syrup, which is how I ended up with some for this cocktail.

    In addition, if you don’t have fresh strawberries, defrosted frozen ones will work just as well. Cherries and pineapple can also be used as they match well with basil, too. I didn’t try mango, but I’m certain that flavor combination would also be out of this world.

    For spirits, this is one that I do think excels with a whiskey – specifically a rye if you have it, but a bourbon will work, too. Rum and basil aren’t a match I love, but if you prefer tiki drinks, you probably know if a rum that marries well with basil for this cocktail. Drop me a line if you do, because I’d love to find one that works. Vodka will work, and some gins will make a gorgeous cocktail, but you’ll need to test out the gins you have as the aromatics in gin differ so wildly and you’ll need one that plays well with both basil and champagne.

    For this cocktail you can absolutely choose to serve it fancy – strained, in a coupe glass, topped with champagne with minimalist garnish. It is designed as a brunch cocktail. However, you can also do a dump pour into a large rocks glass and still top with some bubbly. As you can see from the photos, I tried both and they are both winners.

    In the summer we want our cocktails to be nice and refreshing. One of the best ways to perk up a cocktail for a hot day is to add fresh herbs. From mint juleps to a basil martini, we’ve rounded up our favorite herbal cocktail recipes.

    The mint julep—a simple combination of mint, bourbon, and sugar virtually synonymous with the Kentucky Derby—is a super variable drink. For a very old-school twist, try replacing the bourbon with cognac, a popular spirit in the antebellum South. If you want something bitter, make your julep with vegetal Cynar and effervescent grapefruit soda. Or try our Swedish julep made with mint aquavit and rum.

    Basil is another bright herb perfect for cocktails. Chopped basil leaves lend crispness to a simple vodka martini. Watermelon and basil is a classic pairing—we combine them with tequila, lime juice, and yellow Chartreuse. In the Poddington Pea, a basil simple syrup is shaken with gin, sherry, mint, and blanched peas.`

    How to make Simple Syrup

    Add equal parts sugar and water to a saucepan on the stove over high heat. For this strawberry daiquiri recipe, I use 1/2 cup sugar and 1/2 cup water to make approximately 3/4 cups simple syrup. Bring the syrup to a boil and stir until all of the sugar has been dissolved, approximately 2-3 minutes.

    If you’d like to add a flavor to your simple syrup, like mint, basil or jalapeno, add these ingredients with the sugar and water. Allow them to boil with the syrup. After all of the sugar has dissolved into the water, use a mesh strainer to strain out the other ingredients. Let the simple syrup cool before adding it to a cocktail.

    Bourbon made sweeter with the real strawberries. It’s so simple! This is a basic infusion recipe, so you can substitute another strong liquor for the bourbon, or different fruit for the strawberries.

    Ingredients

    Instructions

    1. Rinse the strawberries, then chop off the leafy tops and discard them. Chop the strawberries into bite-sized pieces. Transfer the strawberries into a jar large enough to hold all the strawberries and leave a couple of inches of room at the top.
    2. Pour bourbon over the mixture, screw on the lid tightly and give it a shake. Store the jar in a dark place, like in a cupboard, for anywhere from 3 to 7 days. Try to give the jar a shake once a day (I kept the jar in a cabinet right next to my coffee so I remembered to shake it every morning).
    3. When you’re ready to strain the mixture, place a mesh colander over an appropriately sized bowl. If you have one, you can use a nut milk bag, clean paint straining bag, cheese cloth or even a coffee filter in place of or in addition to the colander. Pour the mixture over the colander/bag/filter to catch the strawberries and any strawberry debris. Discard the strawberries. If you see any debris in the bowl, pour the vodka through your strainer once or twice more to remove it.
    4. Store the strawberry bourbon in the refrigerator for up to a month, or in the freezer to retain its fresh flavor even longer.

    • My recipe specifies organic strawberries because conventionally-grown strawberries are high in pesticides, and you definitely don’t want to sip down extra chemicals, right? Use the tastiest organic berries you can find.
    • There’s no need to use high-end liquor here, though I wouldn’t recommend any liquor that you wouldn’t want to consume in its original state (e.g. McCormick’s), either. I used Weller for this jar, but Jim Beam is another good choice.

    Last summer’s cocktail series was all about muddled fruits, and I think I muddled all the fruit I could muddle, so this summer will the be the summer of infusions. I hope you all are as excited as I am. Since strawberries are starting to hit the markets (and my love for bourbon is no secret), I decided that my first infusion recipe would be a strawberry-infused mint julep.

    Southern traditionalists make their mint juleps with mint, sugar, bourbon and ice (only!) and serve them in silver julep cups. I am no traditionalist, however! I took liberties with my recipe, tempering the strong bourbon flavor with the taste of fresh strawberries and a light drizzle of honey instead of sugar. I served the resulting cocktails in little glasses from the thrift store to show off their shockingly pink hue. Despite its girly color, I assure you that this twist still packs a punch and will appeal to both genders.


    Strawberry-Infused Mint Julep Recipe

    Ingredients:

    • 7 fresh mint leaves
    • 1/2 teaspoon honey (to taste)
    • 2 1/2 ounces strawberry-infused bourbon (see recipe above)
    • 1 strawberry, for garnish (optional)

    Instructions:

    1. In a rocks glass, muddle mint with a little drizzle of honey (original recipe called for 1 teaspoon superfine sugar).
    2. Pour in the bourbon, fill the glass with ice (preferably crushed ice) and stir until the glass starts to sweat. Add a splash or two of water, if desired, and stir again. Garnish with additional mint leaves and/or the mid-section of a strawberry (as shown in photos).
