  • Fajita meat 10 oz
  • Extra virgin olive oil
  • ½ jalapenos peppers
  • Red onion
  • 1 tsp of cumin
  • 1 tsp black pepper
  • Juice of ½ of a lime
  • ¼ lbs texas white gulf shrimp
  • ¾ Tbsp chopped garlic
  • 1 tsp of sea salt
  • Pica de Gallo
  • Goya adobo
  • Haas avocado
  • Large flower tortilla
  • White Mexican cheese

The recipe is easy, and we say exactly how to grill Mexican Carne Asada, Shrimp, and Pico de Gallo. Sometimes French fries are used to create this burrito, but I feel that it overpowers the beef and shrimp. The burrito is then topped with Mexican white cheese, Haas avocado, and rolled into a flour tortilla. The wrapped burrito is then grilled to a golden brown, helping melt the cheese. This is without a doubt one of the best tasting burrito recipes you will find.

What does Carne Asada mean? What is Carne Asada?

In Spanish, Carne literally means “flesh/meat/beef” and Asada means “roast/broiled/grilled,” so “grilled meat.” When it comes to “carne asada” in cooking, the term refers to grilled and sliced beef, usually skirt, flank or flap steak. The steak is associated with a charred flavor from searing the meat on the grill.

How to make surf and turf kabobs:

Marinade your steak and shrimp. You can do this together or separate them.

Soak the skewers (if wood), in water for at least 20 minutes. Place the kabobs on the grill for 4 minutes on medium, flip, and cook for another 4 minutes.

Remove from grill and enjoy. These taste amazing with steak sauce. We usually serve ours with baked potatoes, and a salad.

SEE HOW TO MAKE THIS CALIFORNIA CLUB CHICKEN WRAP HERE:

This chicken wrap is one of those recipes that I know will make it into my “I want to make these again” pile. So easy, and so perfect for a hot summer day. I have been really into super simple, little heat required meals this year, and this one totally falls into that category. The only thing that I was bummed out about with this recipe is that it calls for bacon, and I for some reason had zero bacon on hand when I went to make these. Which I was so sad about, because even though these were so good, I think they would have been even better with that bacon!! (**UPDATE 7/2015 – I included bacon this time!!)

Regardless, though, this chicken wrap was so good. And if you have a rotisserie chicken, or leftover chicken on hand, it makes these even easier. My idea of a perfect summer dinner!

Best-Ever Pot Roast

One thing I have in common with Amish and Mennonites: many memories of dishes like this "Best-Ever Pot Roast." I have so many memories from my childhood of my grandma simmering a “rump roast” in the oven, or my Mom slicing potatoes and carrots and sticking a pot roast in a Dutch oven. The scent of simmering meat would permeate the house and hours later we’d all sit around for a hearty supper.

These stove-top suppers are very popular among Amish cooks because you can pretty much put a pot roast on the stove and its on auto-pilot. A busy Amish homemaker can stick a pot roast on the stovetop and then head back to the pile of mending, canning, quilting, or anything else she has on her list. It’s almost always a “she.” Gender roles in the Amish church are still very calcified. Men will cook, but it’s usually it’s the meat on the grill. The kitchen is generally the domain of Amish women. Still, things do change and more and more Amish men are starting to do some more cooking and baking. It’s still the exception rather than the rule.

These roast cuts of meat are often carefully carved out during “butchering day” which is when most Amish people have a steer that they home-butcher. The cuts of meat are cured and stored. Some Amish rent freezers and just freeze their meat.

We used frozen chopped onions in this Best-Ever Pot Roast recipe, but you can use fresh just as easily. You can experiment with this by adding some merlot for it to cook in and other spices. I like these types of dishes because you can mix and match and experiment.

Instant Pot Carne Asada

The Spruce / Kristina Vanni

When you're craving carne asada but don't have a grill, never fear. Instant Pot is here. Of all the things to cook in an Instant Pot, beef is one of the best because tougher cuts of meat do well with searing and pressure cooking, which renders them flavorful and tender. Although carne asada is by definition grilled (the term translates to "grilled meat"), you can achieve a satisfying smoky flavor with the use of woody spices like cumin and oregano, which are featured in this recipe. The whole thing comes together in less than 30 minutes—perfect for Tuesday night dinner. Serve inside corn or flour tortillas, as the recipe suggests, or simply sliced and served elegantly on a carving board, with some roasted fingerling potatoes and chimichurri.

Surfer On Acid recipe

Tried this during the holidays when a lot of my friends were home visiting, and wow! Just wow! I actually had one that tossed Midori into the mix and had the Jager floating on top! Damn good shot! Personally I would up it to 1 oz each on the liqours.

I would suggest this to anyone just starting out trying shots.

Surfer on acid is the best in the world. ORDER THE DRINK THOUGH, not the shot. The shot is meager in comparison to the smooth, ice cold, lucious taste of a tall mixed w/ ice surfer on acid.

The full mixed drink has a total of three 1/2 shots, so two drinks is sure to get you fueled up for dancing the entire night. The tall mixed drink is bacardi 151, malibu, yager, pinapple juice, and ice, blended together.

I am a bartender. This shot is tasty and smooth. but the color and presentation leaves much to be desired. I use a 3 count pour of jager, oj, and malibu. and it comes out this brownish yellow color.

Do not be turned off. If any other mixologists have better serving suggestions for this drink, let me know!

Fill Tall Glass With Ice
Pour In:
1 Part Peach Schnapps
1 Part Malibu Rum Malibu Rum
3 Part Pineapple Juice
Top With Splash Of Jager

(you can tell when you start to get buzzed because the drinks start out yellowish brown, by the end of the night they are very brown lol) ENJOY!
