Leave everything to boil for about an hour, stirring occasionally. In this jam you can add coarsely crushed walnuts, about 150 grams, 10 minutes before the end.

When the quinces have softened and turned orange, and the juice has bound like a syrup, the fire is extinguished.

It can be tested by putting a few drops of jam on a plate. If it doesn't spread, it means it's ready.

Leave to cool for 5 minutes, then place in glass jars with a polish. You can use 400 gram jars.
